I picked my two Turks Turban squashes (never grown them before) because the stalks were 'corky' and the plant was dying off, however there is no orange on them as I have seen in pictures, they are completely green with white stripes. When I tried to cut them up and peel them the skins were rock hard and impossible to peel and they looked a bit unripe inside. Should I have left them longer? Will the remaining one continue to ripen? I have never found a squash so hard to peel even when slightly unripe.

They should be orange and stripey. Any chance they aren't turks turbans? My turks turbans were picked at the end of last month - they were orange and stripey and have got more orange as they've sat at home.  I tried one and it wasn't ripe - very hard to get through the skin though.  So I'm leaving them for a bit - you could try the same and see if they ripen.  Maybe you planted them too late?

harvested my butternuts the other day as I thought it might be frosty.  They aren't that orange yet, but sitting in the utility hoping they will turn a bit more yet!
