Spiced apple cake

Butter 125g
dark muscovado sugar 225g
eggs 2 lightly beaten
plain flour 225g
baking powder 2 tsp
nutmeg 2tsp
ground cinnamon 2 tsp
cooking apples diced 300g

topping
2 tbsp clear honey
2 tbsp demerara sugar
(I use half this amount as its far too much)

Pre-heat oven to 160, Fan 140
Cream the butter and muscovado sugar for a couple of minutes, then mix in the eggs. sift in the flour, baking powder and spices.

fold together and stir in the apple

Pour into a well buttered tin and bake for 1 hour.

combine the honey and sugar and paint onto the top with a pastry brush. keeps foiled for 4 days maybe longer, if its still around then

This is how it comes out



I am just waiting for my third cake in four days to come out, can you guess the family like it (just a tiny bit )  :lol:

have you ever tried apple and red leicester cake?

not sure where mum got the recipe from but i used to love it as a kid.

Ummmmm sounds lovely, I will have to try it, here's my favorite Applecake recipe, it's scrumy served warm with cream,

8oz SR flour
1 teaspoon salt
4oz butter
grated rind if 1 lemon
Juice of half a lemon
10oz cooking apples, peeled cored and chopped,
6oz pears, peeled cored and chopped,
4oz caster sugar
2 eggs beaten
1oz demeara sugar

Sift the flour and salt, and mix in the fat until it resembles bread crumbs. Mix in everything else, then bake in the oven 200 degrees c or gas mark 6 for 30 - 40 mins( mines a fan oven so I bake it at 180 degrees c)
would have been enough for a crumble!
