I'm not sure what needs to be blanched and what not . I'm also unsure of how to blanch , would somebody be very kind and point me in the right direction with the following ... swede , carrot , parsnip , kohl rabi , french beans , aubergine , courgette , spaghetti squash , butternut squash and finally marrow . Also on another thread it was suggested to mash and freeze potatoes .... has anyone tried this and if so with what sort of success ? Sorry the question is so long and for my ignorance in these things   :roll:

I got no book with my new freezer which is a pity  :(   I cadged my ma's old book that she got with her freezer years ago and it gives blanching details in that.  You could try the charity shop as they always have things like that on their shelves, or Google you particular food item and all will be revealed

Courgettes don't freeze well so they're best included in say a ratatouille or pasta sauce then frozen  :D

Thanks cq , would you believe the only thing I put in the freezer whilst awaiting a reply was courgettes .... I'm a muppet   :oops:  . Will I still be able to use them as you suggest for a sauce or similar where the quality may not be so paramount ? . I too googled as per your suggestion and it seems that most veg benefit from blanching and there were clear instructions too so thanks again , have an enjoyable evening .  :)  :wink:

Thanks a bunch Aunt Sally , that is exactly what I was after , and it says I can freeze courgettes so I don't feel quite so silly as a couple of hours ago !. I didn't realise half of the list could be frozen successfully so what a lovely surprise , if you were here I'd offer you a glass of wine . :)  :wink:

I spent hours freezing courgettes but they're not great so I'm going with the sauce route from here on in :D

Thanks all , my wife makes the courgette soup from The River Cafe cookbook and it's sublime , mind you with the glut of courgettes we've had we've had to ask around for other things to do with them as well . So far we've had courgette cake , courgette / ham quich , courgette rissotto which included the flowers , chargrilled courgette and a nice pasta sauce from our tomatoes with bacon and courgette . I know I shouldn't say it but I'm just starting to get a bit fed up with them and to make it worse yesterday I found one 'that time forgot' .... it's going to take a couple of days to get through !    :)  :wink:

I love courgette in an omlette fortunately  :D

The pasta sauce made from lots of them with plenty of oil, a bit of anchovy fillet and garlic is a good one, HFW does a version. It has plenty of parmesan and cream in it too.   It does use up lots of courgettes so is a good one. The finished dish is very filling and tasty so has to be a
must-do dish for courgette growers

Found this on John and Val's Recipes section:

Ingredients:

2 lbs (900 g) courgettes
½ lb (225 g) potatoes
2 cloves garlic
1 onion
1½  pints (900 ml) water or white vegetable stock
Salt and Pepper
1 tablespoon chopped basil
1 tablespoon chopped oregano
1 tablesepoon chopped chives
2 tablespoons olive oil
2 oz (56 g) grated parmesan cheese
2 tablespoons cream
Method:

Wash the courgettes and chop into chunks. Peel and cut the potatoes into small cubes.
Peel and slice the onion. Crush the garlic.
Heat the olive oil in a large pan and add the onion and garlic. Lightly fry for about 5 minutes to soften.
Add the potatoes to the pan, cover with half of the stock or water, bring to the boil and then reduce to a simmer for about 15 minutes until half-cooked..
Add the courgette chunks, salt and pepper to taste, chopped parsley and basil and the rest of the stock or water, bring to the boil and then reduce to a simmer for 10 minutes, stirring occasionally, until the potatoes are fully cooked.
Either rub through a sieve or put through a blender to make a smooth pureee.
Return to a clean pan, re-heat and add the cream, grated parmesan and chopped chives without boiling.
Serve immediately with a sprinkling of cheese on the top of the bowls.
Life begins... On the kitchen windowsill.

I lovingly made a beautiful lettuce soup on Wednesday and have to admit it was so bad my other half wouldn't eat it and I threw it away :(
