Thai Sweet Chili Sauce
Thought I'd share this recipie with you, I'm going to try it tomorrow, got to do something with all those chillis!!
2 ounces fresh red chilies, roughly chopped (remove seeds if less heat is desired)
3/4 cup sugar
1 cup white vinegar
4 ounces sultanas, chopped (white raisins)
1-2 clove garlic, finely chopped
2 teaspoons finely chopped fresh ginger
1/2-1 teaspoon salt (to taste)
1 1/1. Place chilies in a food processor with half the vinegar and process until the chilies are finely chopped.
2. Do not be concerned if the chili seeds remain whole.
3. Combine the chili and vinegar mixture with the remaining vinegar, and all other ingredients, in a small stainless steel saucepan (take care adding the salt- you can always add more later if you wish).
4. Stir over low heat until sugar dissolves, bring to the boil briefly, then reduce temperature to allow the mixture to simmer gently until the chilies and sultanas are soft, about 15 to 20 minutes.
5. When cool, puree until almost smooth.
6. Pour into a suitably sized sterilised bottle and seal.

How did this fair out? I don't have any growing this year but if the sauce was a success I might be tempted for next year!

Mmmmmm, thanks Biscombe, I'll try that one. Chillies are beginning to ripen nicely now.

how long will this sauce keep?

dont really know how long it will keep but as its vinegar based i would imagine quite a while in the fridge

as its vinegar based, should keep a long time not in fridge, but if you wanted to make loads as I am about to do as its yummy, freeze it!!!!!

Owing to a horticultural oversight, I have no chillies. But I'm going to buy some to make this - it looks so tempting.

I haven't tried it yet myself, but I don't see why it won't freeze. Of course, there may be a more expert chillie grower out there who will tell me if I'm wrong.
Do you want some chillies noshed???? got lots here. Fancy a weekend in Lincolnshire chillie picking??????
