Had a boiled egg the other day and got a really rubbery bit in it which I pulled out and threw away. Today whilst adding a raw egg to mince I found what looked like a small piece of white cotton with a jelly like substance round it. Presumably this was what turned rubbery in my cooked egg. Anyone know what it is?  Has put me off eggs a bit

It's a natural piece of the structure of the egg called the "Chalazae".  They keep the egg yolk in place.

The are more obvious in fresh eggs

When I was a lot younger, I used to think the chalazae was an embryo, and I know a lot of people still do!

Some chefs go to extraordinary lengths to remove the chalazae. Imagine trying that on a quails egg.

I didnt know that.  I've learnt  so much on this sight!

I used to think it was a fertilized egg thing until I kept finding it in our chickens' eggs (we dont have a cockerel). It never worried me but it is nice to know what it is.
