jam help, please.

jam help, please.

I made some jam last night... two and a half jars :D
It's the first time that i have made it and it tastes amazing (stawb, raspberry and a few billberries)
To be honest it seemed a little bit too easy......beginners luck maybe?

Anyhow, my question is regarding sealing the pots, i just put a circle of baking paper on the jam, then put the original lid on......is this ok? Will it keep? TBH i don't think that we will struggle to eat this batch  :D but i want to do some more tomorrow for Christmas.


Also how do you know if you have over set it?

Thats all I do.  I put the lids on as soon as the boiling jam goes into the jar and screw down, holding them with a cloth.  I dont even bother with the wax disc.  If you reuse jars that have a bubble in the lid you should hear it pop as it pulls down and seals the jar.  I make 100s of jars of preserves and they are all done like this and keep and keep.
As to over setting, do you mean before you jar it up.

Thank you, i will make some more tomorrow  :D

By over setting i think that i mean have i over boiled it...i have been reading about making jam and there was talk of over setting the jam, can you boil it for too long?

 it just seemed too easy, probably just me thinking that it would be really hard to make jam  :D

You can definitely overboil jam (I have done it ::)) it will be too stiff.

If you don't bother with the discs on the top of the jam you could try putting the lid on tight, wear thick rubber gloves so it doesn't get too painfully hot, then turn it upside down for a few minutes. This means the heat of the jam will kill any bugs on the lid, these are harder to sterilise than the jars. Make sure the lid is firm before inverting the jar as you really don't want to end up wearing hot jam!!

Well done isn't home made jam wonderfull and easy.  I was like you  heard all the horror stories of how hard jam is to make.  Well all 8 jars I made of strawb jam have gone :(.
 I was sooooo excited that it was so good I gave them all away :lol:.

Same here, I always put the lids in the oven alongside the jars to sterilize them.

Yeh, thats all i do, and i wash the jars and lids in the dishwasher , makes life a little easier :lol:

I've made courgette and pineapple jam this morning, its not bad . :lol:

Yes making jam is wonderful!! Another three jars this evening  :D
Thanks for all the advise, i put everything through the dishwasher then into bottom oven (aga) to steralise, inc lids. I've left this one a little bit more runny as i read that is nicer that way!
I bet this could get addictive  :lol: :lol: :lol:

Giving them away....matilda, your a very nice person  :D maybe for Christmas gifts, just need to work on some pretty labels now.
