You probably have its baby leaves.

Lamb's lettuce is a a member of the valerian family ;)

The rhs have a good pdf about growing salad leaves

Lamb's lettuce or corn salad is really easy to grow and sets seed easily as well.  I used to grow it as a sort of green manure you could eat a bit of if you wanted to.  It's fairly low growing even when flowering and has lots of fine roots.

If you want the young leaves for salads, I had some in my windowsill all winter, sown in the autumn. Dead easy 2 customers they are. Add some wild rocket! ;)

Chard does well outdoors all winter, just needs cooking then, it goes tough.

Bright lights chard is great for salads, pick the young leaves (even now) you don't need to cook them. We always have some on the go under cloches or in the polytunnel, add it to the nasty stuff you have to buy from the supermarket in the depths of winter and it really brightens up the salad.

Watercress does well as well.

If you want leaves with a beetroot taste, why not grow beetroot and pick the young leaves? They taste excellent. I heard somewhere (once upon a time) that the Romans grew beetroot only for the leaves.
