What to do with cherries?

My tree is full to bursting this year, and they are starting to drop so I must mass harvest at the weekend.

I suppose I could just stone and freeze, but what else could I do with them?

(I'm probably talking about several kilos!)

I'm sure the postage on a few dozen cherry pies to Manchester would work out very reasonable. Ahem.

We lived in Germany as a child and had a tree like that, among others, in our garden. :)

How about cherries in Brandy?  Also, I love cherry clafaoutis.  Hugh FW has a great, very simple recipe.
My mum used to make damson jelly to save having to de-stone the fruit so I guess cherry jelly would work on the same lines.  Although I would perhaps say that it would be a shame to make it a complete jelly and not have any pulp in it.  How about mushing all the cherries up as per the start of a jelly recipe and then pushing the softened fruit though a larger meshed sieve rather than through a jelly bag?  That way you wouldn't get the skin or stones but would get some body to it.
Or, you could just post some to the uk... I love cherries!!!

If they're tart cherries, I put them in freezer bags and freeze them for winter to use in upside down cakes, crumbles and other recipes. It's really nice to have them when they're normally not available. Just don't freeze them in huge bags as they can be difficult to separate if you don't need the whole bag. And I never add sugar to freeze.

If they're sweet cherries, try bottling them with a light sugar syrup (then water bathing) to serve in dessert bowls during winter. You just need to remove stems, wash them, fill quart sized bottles, add hot syrup water, seal and water bath.

Send them to me, soooo jealous! Rick stein has a fab recipe for a cherry almond pie from french odyssey i'll see if i can find it.
Heard it's quite hard growing cherries is it?
