Himself had a leftover chicken and bacon curry (yes, they were leftovers before being turned into curry) and I had the spicy bean burgers that I found at the bottom of the freezer.

We gad party nibbles from the freezer as we didn't eat them before now and OH says the diet starts tomorrow, so get the festive food out of the way please ::) I also did some salad to go with them.
I think there is still a pud in the freezer that we also failed to eat, but I'll have to sneak that one out after his initial good intentions wane and the diet palls a bit :lol:

After our walk in the Hills we stopped off at an infamous franchise burger chain and had a pig out (20 chicken Mcnuggets as a side :) ) so tonight was a simple bit of cheese and crackers.

Chicken breast stuffed with cheese mushrooms and bacon, served with pan fried potatoes and a Rick Stein inspired Icelandic red cabbage. So good!

Pie night! Bacon, potato, leek, apple and cheese pie with a puff pastry (fresh out of the freezer) lid. All good right up to the point I decided to defrost the pastry in the microwave and forgot about it. If anyone's in any doubt, frozen puff pastry is pretty forgiving and somehow I managed to rescue the disaster by pretending I hadn't just created a gooey mess and just rolled it to roughly the right shape :D

Well due to a slip up the other night when a shepherds pie got left out of the freezer when I got other stuff out we ended up with an eclectic mix of 3 batches of shepherds pies & a campfire stew! So we had 2 enormous jacket potatoes, some freshly dug & roasted parsnips, freshly picked !! Purple sprouting broccoli not sure if it’s early or late, carrots & the last of the mange tout that I bought reduced for a stir fry at the weekend. All went down a storm followed by the rest of the chocolate crispier cakes with icecream for the munchkins. Then a request I bake the rest of the mince pies.

I'm having soup. It looks like that dodgy veg soup/stew you got in school that you never wanted to eat. That one, the one that looks... sludgy.

Finally free of the wretched lurgy, the wife & I are dining on finest steak, curly fries and giant baked mushrooms topped with cheese. Following up with a movie and a couple of bottles of agreeable red :D

Late in the last couple of night so yesterday was veggie fingers and salad and Thursday was so memorable I can't think what I had :lol:
Tonight I think sausages, spuds from the shed, veg and spoon standing sound good. I have some roasted spaghetti squash in the fridge that could go with it and may venture plot-wards for something green :)

Youngest had lamb meatballs with pasta. Husband had big mushrooms stuffed with garlicky beef.

Red pepper,courgette, onion, squash, tomatoes and baby potatoes from the freezer, roasted then stirred through spicy rice with some of the oil/juices from the roasting dish. It was lush, so was difficult to leave some for lunch tomorrow ::)

Last night we had Cuban beef, I’d taken out of the freezer 3 tubs of more sauce than Cuban beef so I’d also defrosted 3 bags of roast beef chunks, a good move as all plates were cleared even the munchkins, grandad had his with mash & the rest of us with pasta, carrots,broccoli & green beans on the side. Milk shakes & yogurt for pud for the munchkins

Chicken pieces in a bbq sauce, wedges,salad & hm coleslaw for grownups tonight munchkins are at a party so no dinner for them , so hopefully ours will be blissfully peaceful for a change :lol:

Got carried away gardening so a quick recovery was needed ::)
Shed raid for onion, potatoes and squash. Fridge raid for chicken thighs and a quick dice up of these. Forage through the spice tin and curry was magically produced. Cook some rice and present tea as if nothing was amiss ;) :lol:

Picked up a bit of cavolo nero from the polytunnel and had it in an omlette with a bit of stilton, red leicester and Danish pepperoni chucked in too. Not bad at all :)

This lot are having Chinese pork chops with peas, cauliflower and either noodles or rice. I have a vote for rice, but they just said noodles so I'll ask for votes later and go with the noisiest. Figure that the one most likely to hurt my ears with complaints is the the one to go to. :tongue2:

I've just made a Fish pie Snowdrop for tomorrow, but today we bacon steaks chips peas hubby had mushrooms me tomatoes and a slice of pineapple. It went down a treat :)

HM leek and potato soup for light tea with last of plot spuds, my plot onions and bay leaves.
Unfortunately bought leeks as missed growing any last year. ;)

Yesterday was chicken sausages. Not too sure about them. They were OK, but not one I would rush to buy again.
I'm working late today, so OH has leftover stew to reheat and I'll see what I feel like :)

Have you tried the cauliflower rice or spiralised veg pasta?

Hubby will have the leftover lamb stew from last night, Cajun dirty rice for me & son, dirty rice & no Cajun for munchkins & dil is having the other beetroot burger from last night as she continues to detox 🙄

Went to light the oven last night and it wouldn't light, so now only have a hob, slow cooker or microwave to use. We have investigated further, both by studying the oven with a torch and on-line. It would appear the thermo-coupling has gone. We can't find a repair man on the Island, one would have to come from the mainland. We can order the part on-line and Paul says he will have a go at replacing it himself but we are both a bit wary as it involves gas. SO, it will be whatever we can find in the freezer that we can cook using the facilities now available.

That is a pain wighty :( Are there no registered gas fitters at all on the island that could fit a new part for you if you ordered it in?
We are having lamb tonight with plot spuds and a mixed root veg mash featuring plot swede and turnip-swede :)

Last night was beef stir fry with carrots and peas. I had fresh made Scotch broth with onions, leeks, carrots and a a "vicious neep"-green and white on the outside and white yellow on the inside. It really did nip.
Tonight I've been asked for "bolgetti" or "baagetti". Which translated from youngest means spaghetti bolognese made with beef, the bolgetti or lamb mince, the baagetti. It's beef mince.

Yes, the proper traditional ones do and my local butcher sells them like that now and then. You can buy them as a convenience food in a packet down here through. We have them at work and they are a steady seller.

Yes, they're ok - but wouldn't go as far as to say they're a good alternative ::) :nowink:
Last night was an onion and mushroom omelette with steambag mixed veg. Today there's a lambshank in the slow-cooker - I'll decide on the veg laters..

Christmas dinner from the freezer,well turkey,gravy,cranberry &bread sauces & Yorkshire’s, the rest r.potatoes & parsnips & veg will be freshly cooked.

We had spicy steak lets with baby roast potatoes mushrooms tomato and fresh veg carrots Brussels and peas,
Pud Blackberry and Apple crumble with a bit of custard, all went down well :)

Frugal food here :) We had roast leg of lamb yesterday (bargain from work), so I cut the decent slices off it today and froze them. There is enough for another couple of meals.
With the srappy bits I made baked, stuffed onions. The onions were some of my home grown monsters and were served with spuds from the shed and plot veg. OH hailed it as a feast, but it cost next to nowt :D

The child was a PITA this afternoon so we missed out on a family lunch out. The good lady and I therefore ordered a huge takeaway pizza mega feast for delivery tonight.

Tonight is "massive fish finger" between the 3 of them. I picked up a yard long £5.85 cod loin strip for 50p last night on a late milk run to the shop. My pan is big enough so we're not even cutting it up. Served with mashed potatoes, sprouts and parsnips.
Soup for me, but I may swipe some of the parsnips.

3rd night of cooked chicken (Cooked by me !!) First night hot, last night cold with mash and Piccalilli, and rocket salad with tiny toms and a blob of coleslaw. Tonight don't know yet, could be chicken with baked beans, or maybe risotto, but as I am out this afternoon, probably, cut up and added into a packet/tinned soup. :unsure: :unsure:

Sausage casserole tonight with mashed potato and frozen peas, went down a treat. Pudding Banana with natural yogurt squirt of choc sauce and chopped nuts also went down well.
Hubby loves his puds anyone got any different ideas as I have to be careful due to diabetic border line

I'm having either having buttery cabbage with cooked onions or cooked onions, cheese and sweetcorn. (Dear cooked onions. I love you, your my favourite food XXX).

I've just fed OH beef chilli made with squash and onion from the shed, plus HG beans from the freezer. I shall expect a bit of turbulence later as well. They do seem to affect him quite badly :lol:

Children had spaghetti bolognese with smuggled vegetables. Husband had cabbage, beef olives and white pudding-this is a regional type and is onions and oats fried in beef suet. No organs here.
I had caramelised onions and sweetcorn with some cheese. Omn nom nom nom. Then some vegetable soup.

Pork chops with stir fry veg and chips. Plenty of chilli and ginger, got a bit of a sweat on eating it. The good lady had an egg and anchovy salad and the sprog opted for pesto pasta.

Vegged up spag bol. OH went on a diet after New Year, so all our meals are very veg heavy at the moment, so he gets fooled into thinking he has eaten more than he really has. This spag bol had only a a small amount of lean beef mince, roasted squash and hm tomato sauce from the freezer, spinach added and no cheese on top :ohmy: It was really nice and you didn't miss anything tbh :)
He's lost 3kgs so far :D

Having the In Laws over so lamb, chicken, baked/boiled/mashed potatoes, peas, honey mustard roasted carrots and parsnips. Carrot cake and maybe banana bread with custard for after.
Question is, do I take a plate over to the person out the back?

Want to have a grumble.
We had a visitor (In Laws Ex) foisted on us when we couldn't refuse the request to come around (not the neighbour).
He walked in, didn't give us a chance to get him cutlery or a plate and started into the food with his hands. :ohmy: He ate all the chips (misread label, not roasts)-well Husband got a grand total of 3, started in at the top of the plate of lamb and cleared it all-so 2 inches depth or half a leg of lamb, almost all of the carrot cake except the bit Eldest got to. He ate that much Youngest had to get a sandwich later on since he cleared the mashed potatoes also.
The In Law he's of the Ex of as soon as he got in stopped talking to people and as soon as it was polite walked out and left him behind. Which resulted in them getting complained at by the Ex.
Absolutely scundered of him.

Tonight, I have gone completely "Off Piste". I just fancied a tin of Mulligatawny Soup. I bought one a few days ago and relishing the thought of it. Today I have bought a freshly baked Sour Dough Roll with olives in.
Job sorted, probably have a "nibble" of strong cheddar as well. ;) Mrs B, Just remembered a small already prepped salad, must eat that a well.

Last night Husband and I had chowder with mussels, smoked cod, peas, sweetcorn, potato and onion. I should have added leeks.
Tonight the kids are having fish and mussels in a white sauce. Husband is having fish curry, since he had fish in milk last night.

Chicken thighs and drumstick thawing. Will tray bake with red,orange,yellow peppers, carrots, celery, courgette, chick peas, tinned tomatoes, chilli and garlic etc. Will be enough for two nights at least.

As we now have an oven again, blocked jet not the thermo-coupling, I feel a pie coming on. Like Snowy I have found some cooked turkey in the freezer and some ham left over from Christmas so looks like a turkey and ham pie then.

My chicken and veg tray bake turned into an oven casserole. There was just too much stuff to fit in the oven tray. :D It meant that I could chuck in a handful of macaroni as well. It was scrummy, and that's what I shall have tonight, once I have figured out how to re-heat a portion. Mrs B

A traditional Scottish dish, sometimes served as a Burn's night starter before the obligatory Haggis. We managed to get a free range Haggis this year, fortunately it was ready plucked with only the long leg left on. :D

Cullen Skink is amazing. One of those dishes that makes you really happy afterwards.
Last night was left overs.
Tonight is a bit of a mystery because I forgot to get anything out. Maybe meatballs because I've made them and they are in the freezer so I just need to add gravy and cook potatoes.

I went healthy not heavy as well.
Late finish at work, so heated up a couple of wholemeal mini pitta breads in the oven and had them filled with cooked chicken and salad, with a bit of salad dressing drizzled over. I am not keen on white pitta, they always seem a bit doughy to me. Wholemeal are really nice as a sandwich type thing though :)

Late in last night so had spag with some hm tomato sauce out of the freezer.
Tonight was fish, potato, cauliflower and pea curry with a coconut sauce, plus rice.

Found some ravioli in the freezer, don't know what flavour. Didn't taste of anything in particular, so couldn't tell. Garlic bread and a hm tomato and red pepper sauce with it.

Husband had a Pukka pie (yellow label for 10p) with cabbage, carrots and boiled potatoes. the kids ate with the in laws but when they got in Eldest wanted mussels so we almost had moules marinaire, it had leeks and no wine. But Eldest only ate the mussels and wasn't worried. neither was Husband because I was cooking shelling the mussels and he got to keep clean.
I think next time I'll use frozen mussels, is anyone else a bit wary of using fresh?

Eldest has invented a song, Mmmmeeeatballls, yummmmyyy meeaaaattballlsss. your a meatball, a brown meatball yumm yum. So Husband asked for some for tea. It's actually sage sausage stuffing made into little balls. Husband will have onion, cabbage and maybe a bit of smoky bacon with his.

Night off today :D OH is off out so is having an early tea of pasta with hm tomato sauce from the freezer and some cheese on top. Chances of there being anything left when I get in are low, so I have pork marinating in the fridge to knock up a stir fry for me later on ;)

Husband had a dry fish curry from curry easy. "Quick-cooked marinated" basa with rice and cabbage in the extra spices. Children wanted rice and fish fingers. So I breaded a basa fillet for them. I had celeriac and broccoli soup. Lunch was venison burgers.
Today, In Laws over again. Posk shoulder stuffed with black pudding, apples and onions, chicken, baked potatoes, honey mustard parsnips and carrots (well the oven is on) and peas. Followed by banana bread, maybe carrot cake.

I am not sure. In theory, there is a steak to have with roast potatoes (my version of a roast-for-one) but it may be chicken nuggets with the girl-child (as she doesn’t like roast) or pizza, as there is one in the freezer, and it’s rather in the way.

The in laws dropping out out of Sunday dinner by giving themselves food poisoning has had effects on our menu. At least the chicken will be gone at lunch. Last night was a butter chicken curry without the nearly 60g of butter to make it healthier. They don't know what it should taste like with the butter so leaving it out wasn't a problem.

I made some of Val's recipe onion marmalade. Yummmmmmmyyy. I added a spoon of home made and home grown fruit redcurrant jelly and licked the spoon afterwards. Wow. The difference between it and shop bought is astounding and beyond description. You wouldn't know they were the same fruit, it was playing with almost all the taste buds. Sweet, sour, tangy, fruity. I'm never buying it again.

Well today went sideways. I was sore despite the painkillers and needed a lie down. So I ended up sleeping all afternoon.
So lunch was Husband's idea of food. Bacon sandwiches for him and eldest and Youngest's idea of food was cereal, 2 wheetabix. Youngest is bottomless and knows who is best at buttering the bread when it comes to noms so woke me up by pulling my eyelids up to see that it was daylight Mummy. For fish fingers and sausages and fish and noodles and sausages and fish fingers and noodles and sausages.
So tea was spaghetti with fish, smoked bacon lardons and mussels in a white sauce made with home made chicken stock and red onion as well as 2 sausages for the gannet.
Soup will happen tomorrow. I'll steep some broth mix.

This lot are having smoked and minted lamb with redcurrant (yea I managed a yellow label deal). I usually loathe feeding the wild muchers that rampage around her the same meat too close together, but Eldest hates mint and they are eating with the Grandparents. Needless to say our own jar of redcurrant will be on the table. The difference between it and the shop stuff is shocking. You wouldn't know it was the same fruit.

Tonight we have fish pie. I got given frozen basic white fish fillets at work ages ago (label info or weight incorrect I expect). I found them in the freezer and wondered how to jazz them up into something less boring. Now they have parsley sauce, various veg and chopped hard boiled egg for company and will disappear under a mash duvet in due course :D

That sounds yummy, I love belly pork. What does the sous vide bring to the party please? ( I know what they are)
Ultra tender meat. This goes for the whole sous vide thing. The difference it makes to a humble pork chop is amazing, melt in your mouth (143* for about an hour) This was my second belly try, the first only had 8 hrs and wasn't nearly long enough.
With this one, the moisture was retained in the meat, the texture was soft, not at all stringy. After a 10 min blast in a hotter than the sun oven, it had that much needed colourful crust. It tasted great!
The problems come when dealing with fattier cuts like belly. Lamb can also be a bit hit and miss, the connective tissues and collagen need to reach a certain temp (about 160*) to liquify. Lamb shoulder contains a lot of connective tissue. The ideal temp for lamb is between 130*-140* The longer cooking time (24 hrs)helps to convert the collagen into gelatin.
I'm still in the experimental stage with lamb and haven't hit the sweet spot yet. A 12 hour shoulder under foil in the oven at ~130-140* is hard to beat! I'm yet to do a 24 hr lamb in the sous vide.
Beef is utterly, utterly fantastic. I could go on but this thread isn't the place and I don't want to bore you all to death!
Maybe I'll start something on the cooking forum?
As I say, I'm experimenting and only have limited time, bah! :lol:

Shoulder chunks rather than a whole shoulder. It was Chinese, had chillis, star anise and cinnamon among other things. They liked it. Husband may have the leftovers tomorrow. I might make pulled pork with Boston baked beans this Friday and that'll be pork shoulder.

Japanese style stir-fry, which was more of a saute and braise really, but very nice. Pork, mangetout and mushrooms in a miso flavoured sauce with some plain white rice to go with it :)

I had a salmon fillet with a green bean and onion salad with some sweet chilli sauce to liven it up :)

I use sweet chilli sauce nearly everyday, I buy it in the Chinese supermarket - lovely. I spread it onto bread to make a cheese sandwich ::)

Curry with chana dhal, roasted squash and spinach. Served with rice, it was a vegan paradise until I added some hard boiled egg slices :lol:
It didn't really need the egg, but I had a couple that had to be used up. It was a nice addition in the end :)

Leftover pizza from last night to try and lift my hangover (friend from the States is here for the weekend and we had one or two drops of single malt :D )

Quinoa with spicy, garlicy stir fried veg stirred through it and grilled fish fillets. Sounds a bit hair shirt, but it was pretty good. OH lapsed on his diet last week, but is back on it and requested 'healthy' :)

Hello it's got to be pancakes with lemon juice and treacle may be 9 or 10 as it's pancake day my mother's found a bottle of Agave syrup so won't feel guilty about eating so many might make it 12 or 14 now jezza

I did have cheese and potato pie with roasted squash added into the mix. I also gave it a crunchy top with a cheese and breadcrumb mix. We had green veg with it and a good dollop of brown sauce. Filling and tasty food for a chilly evening. Rowland's tea sounds better though :lol:

"Hi Five" sri lankan vegan gobi curry. It says a medium curry, made from mango, coconut milk and mixed spices. With kale, edamame beans, roasted red pepper, baby sweetcorn and turmeric infused cauliflower.

Yesterday was chicken curry with noodles for Husband. Kids ate at the Grandparents.
Today was pressure cooked Chinese sticky pork roast chopped into slices with noodles.
I'm batch cooking, Mexican mince with tomato passatta to stop it drying out when I freeze it. Lamb Keema 2x batches. Batch cooked in the pressure cooker is 2x brown chicken meat Chinese sticky 5 spice portions, Chinese black bean chicken breast is next and I made a chicken curry with the other breast. I'll cook everything.
I'm trying to get more use out of my pressure cooker over the beloved slow cooker. Gas is cheaper after all. I have mostly stick to cooking root vegetables, but so far this lot are just as happy with the meat being pressure cooked.

Mrs rocket brought home everyone's leftovers from last night. 10 containers with various goodies, not full obvs but plenty for us both and 2 naan. Already taken a meals worth to my mum. :)

Youngest has just eaten their tea early. Some rice and 2 adults portion worth of breaded chicken breast! There isn't a scrap of extra flesh there the jammy sod! I'm just watching to see if said child bursts.

Youngest wanted another breaded chicken breast. Settled for sausages and toast.

Pasta, but the main event was pud. OH helped me drop off some bags of garden waste at the plot for the compost bins and spotted the rhubarb was up and ready to pick. He immediately wanted to take some home :lol:
Anyway, rhubarb and raspberry crumble was duly made. The raspberries were from the plot last year and came out of the freezer. We had some ice-cream with it :)

Well a veritable feast here as there was lots in the fridge to use up,
3 chicken breasts needed using up so they were roasted with stuffing & 3 sausages that needed using by tomorrow too. Leftover onion gravy, carrots,broccoli,peas & mash, bolognese,diet cola chicken & brown rice (did take that out of the freezer) fresh cooked pasta spirals, baked beans that were open. So the fridge is clear now lol. Time to shop again :lol:

Today I am following a newspaper recipe, Spiced Cauliflower with Chickpeas. It is just roasted florets with garlic, cumin seeds and olive oil and caraway seeds, I haven't got any so I shall use star anisee. Also I shall add some Ras el Hanout, just because I like it. ! Just roast for 30 mins then add rinsed tin of chickpeas, and cook for a further 10minutes. It says to add pine nuts at this point, but I haven't got any, so I might add some unsalted cashews which I shall chop smaller. Hope it will be ok :D Mrs B

After the Cauliflower and Chick Peas, there was some left over. I had it with a scotch egg, sliced beetroot,
little fresh plum tomatoes, coleslaw and some grated cheddar, and brown pickle. luverley.
The Cauli and chick peas, were very tasty, but quite dry. An excellent side dish to a curry. Next time I shall do some yogurt with some chopped cucumber in it.

Chicken curry here too, was so mild though & what should have been basmati rice but was more like a rice pudding lol, hubby was cooking & he’s never been successful with rice lol he did however make peshwari naans & they were lovely

Yesterday I overdid lunch and it turned into a massive stir fry so everyone was stuffed and skipped tea.
Which was lucky because I was sore and needed a lie down and fell asleep for most of yesterday. So tea went by the wayside.

Had a beef stew with dumplings in the slow cooker all day so that we could (hopefully) get on with some jobs outside and then come in to a nice hot meal. Dodging the showers, will be sitting down shortly to said stew with cabbage and mash. Good solid food to line the stomach.

Cheaty fish pie as I was running late and needed to get a meal on the table quick. Assorted fish from a fish pie mix, packet parsley sauce and some frozen mixed veg for the filling. I did make the mash top and slung the whole lot together, then into the oven quick and assume innocent air of domestic goddess in control as OH arrived home :lol:

Don't worry about it NS, often got lost in a book and then suddenly realised HE will be home soon and I've done nothing. Move that pile of ironing/washing up to the spare bed, spray the furniture polish around like air freshener. Empty the waste bins and then say 'you didn't tell me what you fancied tonight' with a very innocent face. :D

Prawn and chorizo rissotto. All from bits and pieces found in the fridge/freezer and cupboard. Three prawns each, two pieces of chorizo, sugar snaps, courgette, onion and half a pepper. Surprising what you can do when you put your mind to it. We always have those semi baked rolls in the cupboard so a couple of those with it and we are replete.

Chicken stew with potatoes, swede, carrot, onion and celery, plus that barley and split pea soup mix. It also got herbs from the garden added in.
Pud was plot rhubarb that had been lightly cooked, then set into raspberry jelly :)

I’ve been ver to the farm where I buy my meat from to collect my order of stewing steak & mince from last week so thought we’d have sirloin steaks as a treat, they were beautiful, oven chips for hubby & son, dil & I had sweet potato wedges with spicy seasoning, salad, hm coleslaw & hm Waldorf salad,fried mushrooms, oh the boys had fried eggs with theirs . Munchkins ate earlier of leftover chicken pasta bake.
Now shall I have cheese &biscuits or cut in to the fresh pineapple lol

Roast p ork(what is it with the spacing this evening, must be my fingers, so please excuse them), roast p otatoes and various bits of veg that needed using up. Filled up a hole and made room in the fridge for anything we are able to get.

Yesterday was roast chicken, and after splitting of the breasts and legs for the freezer, the rest of it was picked and put in the stewpot with chicken Oxos, some soaked dried pulses/barley (old fashioned soup mix) onions, garlic, carrots and a bit more of that squash :lol: that'll do for tea ;)

Our neighbour works in a cafe attached to a local supermarket and spent yesterday deep cleaning the kitchen and 'distributing' the food they had there to other departments in the store. What they couldn't re-use elsewhere she was allowed to bring home. She has given me a 3lb bag of sliced mushrooms and a 3lb bag of sliced red onions. Now all divided up and in my freezer. Mushroom omelettes for tea tonight therefore and I expect we will have chips with them. We had already decided to have a 'small' dinner tonight as we had a 'big' dinner (roast) last night to try and eke our supplies out further.

Yesterday was a Turkish dish. Minted lamb pilaf with cherry hosef (spiced jam).
Tonight is the other minted lamb steak with apples and onions in a creamy sauce (Normandy dish). With mashed potatoes.

We are Ding-Dong-Ditch feeding the In Laws curry tonight, we're just feeding, not having them over. Both dishes are marinading in the fridge.
Proper hot curry is Chicken with Vindaloo spices.
Mild curry is Chicken with apricots, a Parsi curry.
Both recipes are from Curry easy by Madhur Jaffrey- which is on a 99p deal this month.

Indian takeaway. Our local restaurant do an amazing meal deal for 2. Out dog is now very cultured in her eating habits - she's a fan of poppadum and prawn crackers. Not something we do very often which means that when we do it's all the nicer.

A neighbour had seen 2kg trays of chicken legs reduced to £1.75 so had picked some up for them and an extra one for me. A lovely thought.
Plastic trays were disinfected and hands washed before and after they were bagged up and put in the freezer, all except the one I roasted for my tea :D

This lot had fix pie mix and mussels in a thick parsley sauce with macaroni shells and broccoli. There was no cheese at the shop :( or it'd be a cheese sauce. Followed by still warm banana bread.
My family tradition was to have the Grand parents over for Easter dinner but we can't now (why don't we have a crying emoji?). So Husband ding-dong-ditched dinner over the hedge to them. Make your own Easter duck breasts dinner. Also some banana bread.

Yes here in the midlands it is, it’s taken me over 30 years to adapt, where I come from they’re bread cakes or rolls :lol: Having lived in London as well in between moving here it’s taken me a while to remember what to call them lol as I think in London they were batches!

Tonight it was diet cola chicken with extra veggies & instead of a chicken stock pot I used some rather nice chicken sauce I had left over, with rice.

Last night was lamb in gravy with legumes (bean mix), mashed potatoes and broccoli. Scorchio bread for after because I baked the bread with the halogen oven and that doesn't work.
Tonight is last of the lamb curried with rice or salmon in a white or cheese sauce, maybe with pasta. Sauce is dependant on if there is any in the shop. Cheddar run the last time I was there.

Yesterday was roast lamb with all the usual trimmings. So far today we have used the rest of the joint to make curry for this evening and a shepherds pie for tomorrow. Any left over veg from yesterday went in the pie. We bought the joint back in February when it was reduced and decided then to save it for Easter so a real bargain.

Chili and rice. Plum crumble. Following freezer breakdown which necessitated husband eating ice cream for breakfast I have cooked up all the fruit, some refrozen, some with yogurt for breakfast. Made chilli out of the mince. Scrap man took the freezer this morning, want to replace with a larger model but that will have to wait fortunately we have a chest freezer.

Husband had chicken curry with rice and vegetables. Children had fish fingers and rice. But the Evil Pea and it's relatives (it's from a book) and broccoli had a fight in the rice so there was peas from the battle and sad little broccoli in it! The lengths I go to to try and get vegetables into Youngest.

Going to try a recipe I found in a magazine - peanut butter chicken fillets with crushed cornflake coating. Sweet potato wedges and salad to go with. Had all the ingredients apart from natural yoghurt in the fridge/cupboard. I'll let you know how it goes. I do love experimenting! :D

Realised too far down the road ( on the dash to the bank) that we had left the uncooked, caught last night prawns in the fridge at work, don't think when we go back on Monday they will be any good.) Finally got my in-laws to have a look at what they've got in their three large chest freezers! We are eating the stuff they donate to us as they bought it but now 'don't like it'. Chicken Kiev, salad and new potatoes tonight.They are both self isolating as both have major health issues and are 80. On our way to the shop each morning we drop off the paper and any shopping they want and leave it on the top of the freezer in the garage and talk to them on the phone or through a bedroom window. We have also confiscated FIL's car so he really can't go out. Will see what we get tomorrow! :D

Chicken korma, Husband ate the kid's since they didn't like it, or the colour of it. So one had plain cooked chicken and the other some fish fingers. I turned the left over rice got turned into Indian rice pudding. Evil pea attacked the rice...
It was very nice, but next time less cardamom. Note to self, cook 2 cups of rice next time to have loads of rice pudding leftovers, 1 cup dried for a kids bowl full extra.

Tonight Steak pie that's been kicking around in freezer for quite a while with new pots and veg, pud Plumb crumble, trying use up all the old fruit ready for this years crop :D

Cauliflower cheese and bacon followed by chocolate cake. Husband has hurt his back and that what he fancies.

Went to the local farm shop today and got told off when we said we were husband and wife. 'Only one person per household' but when we explained Paul was shopping on behalf of his parents (who the shop know), and I was getting our bits and pieces they were okay. Jacket potatoes (IOW grown) with steak for Paul and cheese and tuna for me.

Our version of Spanish omelette. One of our tenants does a lot of cooking for the WI market usually held in the hall on a Friday but of course now cancelled but she doesn't want to upset her supplier of free range eggs and so is giving them away. We have received so many and it was one way we could think of getting rid of a few of them. I really enjoyed it.

We had spicy beans over rice with a spoon or two of greek yogurt on top. The beans were borlotti that I grew last year on the plot. It is a good meal for clearing out bits of veg from the fridge and making them into something really tasty. OH happily wolfed it down :)

Tomorrow we’ve got the 2nd half of a kg of mince that was used yesterday to make meatballs along with 500g pork mince resulting in 6 portions of meatballs in tomato sauce for the freezer. I like this bulk cooking, very satisfying.

I made too much smoked mackeral pate back in December for 'that time of year' so finished it off tonight with crusty bread, salad and potato salad. Only five packs of smoked salmon left on the top shelf of the freezer which is usually reserved for that time of the year. :D Paul does tend to start buying it when it's reduced from about September onwards. Last year we had eighteen packs, but at 50p a pack I don't complain.

Ready, steady, cook brain teaser today. Freebies from work yesterday (a.k.a. reduced stuff that didn't sell) - pack of mince, pack of 2 avocados and an iceberg lettuce.
The chickens got the lettuce and were happily pecking it around the run and demolishing it when I left this morning :lol:
I have dried home-grown black beans soaking which I grew from saved seed, there are frozen chillies in the freezer and I have coriander growing in a pot. Yup - chilli and guacamole it is and it has cost next to nothing :D Rice on the side or maybe wraps :unsure:

Went out for a family walk for Father's Day, came back through the city centre on the way home. Turns out Five Guys was open for takeaway so I had my first proper burger in months, absolute heaven!
Dinner was an equally amazing rack of BBQ ribs with some of last years corn on the cob out of the freezer.

Lecso, a spicy rice, paprika flavoured riced with all the 'odd' sausages that I found in the freezer. The recipe said three tbsp of paprika, we only put in one and were glad we did. If we'd put in the three!

Katsu curry as I found some Japanese curry roux I bought ages ago lurking in the cupboard. Basically breaded pork cutlet served over rice with a thick vegetable curry.
It was pretty good, if I say so myself :)

Yesterday, the plans collapsed halfway through. The rice I cooked and chilled then added some cold small veg from the night before. I soaked some Raisins/sultanas, (not sure which, these were intended for the Coronation Chicken !) Added the fruit, and sprinkled with mild chilli dipping sauce. Along with the carved cold chicken, it was very tasty. Cooked too much rice, so it will be very similar tonight :wacko: Mrs B

Bought another gammon shank. Put it in the sous vide last night, (68* 24 hrs) so having that with lentils, pots, carrots, greens from the garden and lashings of parsley sauce. Real cold day fodder! yummo!

A scotch egg, a little beetroot, some diced cheese, black olives, a small salad and Tzatziki with Poppy and Sesame biscuits . The salad was Lettuce, Rockets, Chopped Basil and Tomato drizzled with Olive Oil.
Then I felt hungery later so had a small steamed pd with ginger syrup. But it was all lovely :)

Lunch was late :( at 2pm because of unexpected visitors (socially distanced in the garden). So dinner was scrapped so hubby had a Chicken club sandwich & I took a dressed crab from the freezer & had it with a slice of brown bread & butter. We both thoroughly enjoyed not having ‘dinner’ :D

Roast lamb,potatoes & peppers, hg new potatoes -steamed with peas,carrots,cauliflower & broccoli. Yorkshire’s ftf, gravy with gooseberry & mint jelly & redcurrant jelly with port.
We did enough veg & steamed potatoes & gravy to make a cottage pie with the leftover lamb cut up very small, that’s now in the freezer with a pot of extra gravy.....it’s booked in on the menu for later next week :D. I love it when a plan comes together.

I defrosted a bag of diced beef overnight, and soaked some beans, they're going in the slow-cooker with onions, tomatoes etc for a chilli, got some garlic bread slices to go with it. :)

I ended up with a freebie whole fresh chicken from work, so roasted that early on today before it got too hot in the kitchen. The roasting pan juices were saved and made a little pot of jellied stock, once I had chilled it and scraped off the fat.
Both were put into action tonight. The stock was used for a stove top quick braise of an onion and homegrown veg - new potatoes, fennel, courgette and celery, with fresh parsley from a pot in the garden. We had cooked chicken warmed over the veg with it. Yummy :D

Grated and then squeezed in a tea towel and added to mince adds bulk but no taste as such. My grandsons love spag bol and cottage pie but won't eat veg. I add the grated courgette and carrot so they get the goodness. My daughter's offerings don't taste the same as mine, apparently! :D

I chopped the sausages up into bits, fried them with the veg, added tinned tomatoes and chilli paste and simmered for a bit, then served the lot over rice. OH thought it was fantastic and wolfed it down.

I added some Adzuki beans to stretch it. Worth a go if you've never had them.

John had been out fishing yesterday and offered us crab meat, so crab salad for tea. Today it was only the brown meat left which I'm not keen on so I had tuna and Paul finished off the crab with potato salad and other salad bits. It' too hot to contemplate anything cooked. I have been working a lot of late nights this week, but made it back early enough for tea the last couple of days :)
On Friday we had a takeaway curry, so I had shashlik chicken (chicken, tomato and pepper skewers cooked in the tandoori oven) and spinach rice. Not had the spinach rice before, but it was great. I might try making that.
Yesterday I brought home a couple of steaks from work, so we had them with plot new potatoes and homegrown salad.
Today OH is off on a trip for a couple of days. Back to more mundane stuff if I am just cooking for me. I have a lot of bits and bobs of homegrown veg in the fridge, so I think a stir-fry with noodles could be on the cards :)

After a particularly trying day I rewarded myself with a mountain of chipotle chicken wings and onion rings, plus some delicious bottles of Sadler's Mud City Stout 6%, finally back in stock at my local supermarket.

I don't know if this figures with anyone else, but we'd planned a pasta with our own passata, and an omelette, and after a beer, and a look out of the window yesterday, we just shrugged, and had a few biscuits and cheese with our new home-made chutters, and a bottle of Pinot Noir...
We've made eight jars of our own fig and apple chutney, as a chum had given us a huge bag of Bramleys, so we'd chucked in every sort of spice and dried fruit we had, and let it 'mature' for - er - 24 hours...
We were trying to replicate the recipe for the preserve I mentioned a while back, (suitable for vega... Growsters), but it became a spice-fruit-fest in the end, and weren't we glad we did!

Some steak burger thingies I got at work. They had a lot of pepper in them which was OK, but that was all you could really taste :lol:
Anyway, with them we had oven chips and my new favourite side dish of oven roasted cabbage wedges. Just rub them lightly with oil and seasoning, sling in a baking dish and roast for 15 minutes or so. Works brilliantly with fresh summer cabbage from the plot :D

We had chicken drumsticks baked on top of thick slices of sweet summer plot cabbage, with a bit of stock in the base of the dish to make some gravy. Plot spuds on the side. Very simple, but really tasty :)

I made a lot of pasta sauce on Thursday and the leftovers have been lurking in the fridge since. Fried some chunks of chicken breast and then simmered them with the sauce. Served with ricotta mashed potatoes, as I had half a tub of this lurking as well.

As per Aunty's Jamie Oliver picture, the recipe was much modified from the original online version, but I didn't need to go as far as one reviewer who said her husband hated everything about it except the chicken! ::)

Miso braised pork with ginger and some stir-fried veg. It should have been Japanese rice with it, but I had Korean sticky rice in the cupboard, so that stood in for it :)

Tried one of the new Co-op box meals. Serves two for £8.00, but we got this for a fiver reduced as it had to be sold for today. Southern fried chicken, chips, bbq baked beans and bbq sauce. It wasn't too bad although we decided that it could do three people or two adults and two young children. Only cooked half the chips as we know how many we usually eat, there are four pieces of chicken (out of ten) left. The beans were disappointing but Paul like the sauce. I'd say they're good value for money. We have already decided to try the others in the range (there are four, Indian, Tex Mex, Thai and the chicken one).

Roast beef, yorkies, roast potatoes, cabbage, swede, parsnips and carrots plus the very last runners I found when stripping the canes earlier, they're very small and I have made sure they are'nt stringy (tasted okay raw).

I found a Bag with a lamb shank. I suspect it had been in the freezer for about 2 - 3 years. De-frosted and took fat out and put into casserole. Added loads of different veg some fresh, some a frozen stew pack, potatoes and a handful of macaroni. Lots of mint and thick nisto gravy over, and cooked for about 60 mins.
It was scrummy, and the second half tonight with loads of mint sauce. Mrs B

Had a chicken, mushroom, mustard and honey casserole in the slow cooker all day. The house smells lovely. Just put some small new potatoes in the pot as well, so a one pot dish (less washing up (hooray). Himself wants some crusty bread as well, so some part baked rolls to put in the oven.

Cottage pie here too & it was delicious, made from a batch of mince & onion ftf, well worth cooking up larger batches I find of what I call basic mince & onion in the slow cooker, then I can doctor as we see fit when I take it out of the freezer :)

Picked up another of the Co-ops 'Meal for Two' boxes in the reduced section. Thai tonight. Red and green curry with jasmine rice, spring rolls and rice crackers. It was okay, not my favourite of the three we have tried so far.

I would recommend these if you have small potatoes to use up after lifting your crop. Parboil in the skins until just done, cut up so all the same size, then put in a bowl with a bit of oil, garlic, chilli and ground spices. I used turmeric, coriander and cumin, but you could just use curry powder. If you leave the garlic and chilli in little pieces, they go crispy in the oven like on salt and pepper dishes from the Chinese takeaway, so add lots. I added sliced onion in as well.
I could get posh and say leave to infuse, but truth is I had stuff to do, so I prepared them earlier in the day, covered the bowl and left them out on the side. The spices soak into any cut surfaces, so you get an extra whammy of flavour. I did give any whole ones a bit of a squish with a fork, so they split their skins, but were not broken up.
Lightly oil a baking tray when ready to cook and chuck the veg on. Roast until golden and crispy.

I have taken out a Thai Green chicken curry with jasmine rice. To be honest it is now semi-thawed and does not look very nice. I think I will take it out of the containers, half thawed !!! and chuck the whole lot in the oven for 25/30 mins. ::) I will eat with loads of mango chutney and pickle.

Freebies from work - boneless chicken thighs from a few days ago that had been in the freezer, plus a couple of bunches of spring onions and some chestnut mushrooms from yesterday (we are allowed to take home the reduced stuff that doesn’t sell).
I browned the chicken, fried the veg briefly and then put it back into the pan with a Japanese braising sauce recipe I have. Finished with some coriander from the pot on the kitchen windowsill and all I had to add was some rice. It was really tasty :)

It's only the Coleman's packet sausage casserole mix. Always been a family favourite. The original recipe is just for sausages, onion and peppers with the mix. I always add anything else I have around that needs using up.

We got a slow cooker this week so I made a chicken cacciatore. Bit too watery, I need to play around with the amount of liquid I'm using, but still very tasty and refreshing change after all the junk food we've been eating recently.

Pretty much what you put into a slow cooker is what you get out, so you do need to cut down a bit on normal recipes. I tend to just put in enough to barely cover the food, as more always comes out of the meat or veg.
Slow cookers are great though. It is a good feeling to know that tea is gently blipping away in there and will be ready when you want it with no fuss :D

We are having a chilli with some diced and minced beef as I have found both in the freezer, but not enough of either on their own. To spook it up a bit for Halloween I am going to add roasted pumpkin that I have just made. There will be plenty of garlic going in as well to ward off the vampires :lol:

It needs the quicker heat of the oven to turn the beer into the 'treacle like' sauce. Did not work in the slow cooker as the beer stayed liquid. You just need to 'play' with it and find out what works. One thing I would stress is, cook your onions first, don't put them in raw as some cook books suggest, as they come out raw.

Well we've now done all of the Co-op 'meal for two ' boxes. Each of them we have brought we have divided up as to how much we know we will eat. We have I will admit, only brought 'reduced price'. I think I've said before they would do a family of four with two small eaters. We had tonight the Peri Peri Chicken one. I don't know why they think we need chips and rice. We've frozen the chips and two of the four pieces of chicken we stir fried with some pak choi we had with the rice was enough.

A real hotch potch here tonight. Beef hotpot type thing for himself with dumplings. Beef meatballs with runner beans Italian mixed in with penne pasta & vegetables with pesto all mixed together & a good sprinkling of cheese all baked in the oven.

Digging around in the bottom of the freezer today to try and make some room for later next month(! ) found some faggots we bought three years ago from Bridgenorth when we went on holiday to go to the Iron Bridge area. I made some onion gravy to cook them in, but we have now rediscovered why they have been there so long. Thank goodness they've gone. We loved our holiday there, really recommend all the museums, even the one about tiles. We were really surprised we enjoyed that so much.

Last year, it was at a ladies house in the Village and we raised a few £K.

Pizza delivery banquet, stuffed now, happily enjoying a Mud City Stout for pudding.

Sausages and slow fried onions in baguettes. OH was late back so the onions pipped away until he was nearly home, then the sausages went on and the bread went in the oven.
Served with hm chutney and he thought it was just the best thing ever. He usually does when he is really hungry :lol:

Co op were kindly reducing their large packs of chicken pieces again this morning, so I picked up a pack (I only went in for the paper and some milk :lol: )
Some is now in the freezer, but left enough out for today and tomorrow. It'll be coated with spicy breadcrumbs and baked, to be served with coleslaw and other salad bits.

We don't eat desserts( puddings) in our house. When I was searching through the freezer today for something for tonight I found the cheesecake I made last year! (For you when). I'm not bothering again. I'm also not bothering to make a cake for later next month because it went mouldy and we'd only ate about a quarter of it. I'm being very strict this year.

You can put all sorts in them, including bacon. I make them with finely chopped onion, grated potato (excess liquid squeezed out), plain flour and seasoning. Have at times added grated beetroot, herbs and cheese. Some recipes use self raising flour and egg but they fluff up a bit too much like that for me.
Have seen them referred to as the British Rosti.

Years ago, one of my mum's friends showed her how to make Latkes (Jewish potato cakes) which look similar, but have eggs in. We often had them for tea with some bacon or an egg :)

An old fashioned beef stew has been in the slow cooker all day. Dumplings will be added later. We have decided against mash, because of the dumplings, but we do have some crusty bread that needs using up.

Well it should have been Chicken,leek & bacon pie, but when. Started making it I found the leek I thought we had had been used, so upped the onions to 2 & added a stick of celery,no parsley for the mash topping so added grain mustard, made it all & realised I’d forgotten to put the chicken in :ohmy: :wacko: :lol: so took the mash off & stirred in the chicken oh & added peas so there’s no other pots but the dish it’s in.
That’ll teach me to be doing 4 things at once :D

Leftover beef from yesterday reheated in a little gravy. I did a veggie bake on the side with parboiled potato slices, plus cauliflower and broccoli on top, then cheese sauce and extra cheese dolloped over everything. There was 1/2 a squash in the fridge, so roasted slices of that as well while the oven was on.
For a mishmash meal it came out really well :)

We had lamb so are going to have a pilaf with rice cooked with spices and herbs, cooked in advance, then cooled and reheated with the rest of the ingredients.
As well as the lamb, there will be plot greens, plus whatever else is left in the fridge. I think some toasted coconut as well, plus a dollop of yogurt on the side :)

I have cut some decent slices of gammon for that and the rest is cut up ready to go into a big pot of soup. So far it has onion, carrot, celery, swede, scotch broth mix, stock powder and herbs and smells glorious. There is shredded cabbage to go in later with the gammon and fresh parsley from the greenhouse :)

Well the Cumberland pie filling remained separate from the topping, should have been sliced potatoes on top but there was a large amount of mash in the fridge so that got microwaved & used up.
Today I’ve got mince out (not ideal as I try not to plan beef followed by beef but I slipped up lol) I’ve got out my PON books & decided on Pastitsio (sp) mum I’m sure you’ll put me right. Just hope hubby will eat it as it will have bought dried pasta in it & he only likes fresh homemade pasta but I’m not making macaroni as well (don’t know how is a big issue to that idea as well)
