Evening all
I have several kilos of damsons from our tree sitting in the freezer. I fancy making damson wine but all the recipes I've come across seem to contain huge amounts of water. I'm sure that with the quantity I have I should be able to make a wine that contains a greater proportion of damsons to water.
Question is - will this be better/nicer?
I've never made wine from scratch before, so be gentle!

Theoretically if you use more fruit than the recipe says then you should get a wine with a lot more body. HOWEVER, you may get a lot more of a fruit haze so don't forget the pectolase!
Personally if you are new to winemaking I would try and make a gallon to the original recipe and see how that pans out after a month or so (although it should of course get better with age) If it seems a bit thin then is the time to experiment with more of your frozen fruit in another batch.

I'd look at it this way. say you have 9kgs of damsons, adding the right amount of water will give you about 6 gallons of a very nice damson wine.....
But that 9kgs of damsons may only give you a gallon of juice which would give you 1 gallon of damson wine, even if it was nicer.
I know which one I'd choose! hic :blink: :blink: :D :D

GO FOR IT ! Damson is one of the very very best "Country wines" I have about 3 galls bottled and 6 - 7 galls on the go. It is very good mixed with elderberry 50/50 Don't forget Cleanliness, Cleanliness, Cleanliness. Cheers, Tony.
