Patty Pans

I've got some family coming over at the weekend and id love to feed them some stuffed patty pans. I recently tried some stuffed with flavoured rice and still found them a little bland.

Has anyone got any ideas what's good to stuff them with? Half my family are veggie so veggie and meat options would be great

I part cooked the patty pan in simmering water then stuffed it with a mix of onion, peas, a little chilli , herbs and rice ( a few bacon bits would add extra flavour)  topped it with cheese slices and braised in a tomato sauce.

Top dressing of flat leaf parsley, if you have it, would be good. Coriander leaf would be another choice  :tongue2:

Ah, hadn't thought of boiling it first, that will probably help with the hard textur I had last time. That does look incredibly good with all that melted cheese!

I grated up a couple to hide in corg and parmesan bread, which was good, and fooled the kids into thinking the yellow was cheese  8) but have to admit not being impressed by them in the sea of courgettes types I grew so the plant was the first to hit the compost heap.  Good luck, I'm still looking at some waiting for inspiration....

these have been miles behind my other courgette plants so its nice to see they are now producing. Will let you know the verdict over the weekend
