what to do with a patty pan?

I've eaten this when they're small and soft, and like courgettes - but never eaten one that now has a hard shell like a winter squash  ;)

Any suggestions other than the usual/run of the mill - cut it in half and stuff it  ::)  :D

Slice into segments, add to a roasting dish along with chcken thighs (skin on), sitting on a base of sage, sliced onion, sliced red pepper and a edged lemon, with a splash of white wine or apple juice

Cover with foil and roast for 30 mins, than uncover for 15 mins.

Take off chicken skin, drizzle with balsamic vinegar.

Enjoy with decent bread for the juices.

The squash skin may not be to your liking but it peels away easily

I make patty pan and cider soup. Roast patty pan, onions and whole bulb of garlic in olive oil with seasoning, add chopped thyme and a tablespoon of honey for the last ten minutes. When cooked squeeze out garlic, and  blend the veg with half a can of cider and veg stock. Adjust the liquid to however you like your soup. :)
