I grew pattypans for the first time this year and initially I was reallynjoying them but now :wub:
I have had them baked, stuffed and today made into soup...... I need some inspiration or the last 7 or so are going to be composted!!!!

I use them in omelettes and in cakes, muffins, stir fry, chilli, casseroles. They can be used exactly like courgettes so crumble, bread. Oh the list is endless :tongue2:

The number one basic use we put them to is meat substitute - ie: battered fish -, half, de-seed, slice: you get like salmon fillets looking things. Par-boil and deep/shallow fry in your favourite coating. Serve with rice and fresh salad.
Also brill in pickles, especially the green/underripe ones.

Mine don't look like flying saucers now so the grandchildren aren't interested any more ::)
They'll end up going in a pan (or 2) of chutney :lol:

we're making lots of ratatouille at the moment with all the courgettes and tomatoes :)

Yes. I used yellow ones by the way.
INGREDIENTS:
190 g all-purpose flour
150 g white sugar
5 g baking soda
2 g ground cinnamon
3 g salt
1 egg, lightly beaten
120 ml vegetable oil (I used sunflower)
60 ml milk
15 ml lemon juice
5 ml vanilla extract
125 g shredded zucchini or patty pan, use smaller ones as the big ones are too seedy!
85 g dark choc chips (I think I used 50 g)
60 g chopped walnuts
DIRECTIONS:
1. Preheat oven to 350 degrees F (180 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
2. Combine flour, sugar, baking soda, cinnamon, and salt in a bowl. Mix egg, oil, milk, lemon juice, and vanilla extract in another bowl; stir into dry ingredients until just moistened. Fold in the courgette or patty pan, chocolate chips, and walnuts. Fill prepared muffin cups 2/3 full.
3. Bake in preheated oven until a toothpick inserted into the center of a muffin comes out clean, 20 to 25 minutes.

You might well know this, just to point out for all, all those will have very different cooking times. Unless for a special purpose, I do not harvest such tiny ones as on top.
