Raspberry jam mmmmmm

Yeh I made another jam!!!

Admitidly I cheated a bit, I had some raspberry's of mom and dads bush, and some from the fruit farm,  but I had to buy some from Sai******brys :unsure: sorry.
Anyway the jam is wonderful and so easy  :)
Thankyou again Val.

So far thats.... rhubarb chutney, rhubarb and ginger chutney, strawberry jam x2, raspberry jam, breads, yoghurts......and apricot jam later :nowink:

we have a row of wild plums, some red and some yellow.  Yesterday I made a big batch of plum jam....and burnt it. AAARRRGGG.   >:(  It was completely inedible.  Trying again now...good job we have hundreds, nay thousands of plums this year!

A couple of years ago my uncle had a glut of plums.  I made some into jam, halved and stoned the others and put them in the freezer and stewed them for dessert in the winter time.

just found a jamie recipe for plum granita, looks good, will stew some for freezer too. Delia has a good recipe for plum chutney, will make a few jars of that for putting with hampers for crimbo.

Raspberry Jam is easy to make and, interestingly, the only jam that I know of that an uncooked version can be made of. Take an equal amount of raspberries and suger. Put the sugar in a bowl on the lowest setting of your cooker and leave for about 15 mins until just warm. Mash the raspberries and sugar together and put into hot, sterilized jars. This wont keep as long as a cooked jam, about 2 months, and really needs to be kept in the fridge.

I've just made just under 5lbs of raspberry jam from raspberries growing wild down the lane from us!!!
 I usually make mine with a little less sugar than normal and always add lemon juice too......you still get the sweetness but with an extra tang!!!! :D :D

That's how I like mine too, Aggy. the lemon juice also keeps a brighter colour to the jam.
