Well, there you see, some friut like pear or melon, need to be mixed with ohters to get a nice jam.

I don't see, what difference you mean there to be between chutney and relish, but here you go:

3kg pears, cleaned, seeded, chopped, keep in acidic water to prevent discoloration
1/2 l weak white wine vinegar with 70 dkg sugar, bring to the boil, skim froth, add pears, cook al dante, put in jars, cover with syrup.
Can be flavoured by savory or tarragon.

PEAR APPLE AND GINGER JAM
1-2 lemons
1kg pears
500g eating apples
125g ginger-fresh
1kg sugar
DO NOT ADD ANY WATER TO THIS.

juice the lemons to get 1/3 cup of juice... reserve seeds and the juice seperately.

peel, core, chop pears.and apples into 1cm bits (keep the apple bits back)

peel and chop ginger into 3mm bits

combine ALL ingred. in a jam pan and heat until sugar is disolved

tie the apple trimmings and lemon pips in a muslin cloth and add to the fruit

bring to a rolling boil. for at least 15 minutes before testing for a set.

remove muslin and pot jam as usual.

 :D THIS IS LOVELY...Made yesterday and the little tinkers have eaten loads of it!!!!!   :roll:  Aaaaaaarrrrrrrgggggggggggghhhhhhhhhhhhhhhhh!!!!!!!  :?
I'd like to forage more and cook more and garden more and enjoy it all.... and have the time
