How do you store potatoes

I look to have loads of nice early potatoes, new to this.. Do I just dig them up and store in sacks outside ? do they keep this way ?

You cannot store immature early crop spuds - what you might call "new".

Earlies can be stored, but only after maturity. You have to let the plant fully grow, die down, lift spuds, dry them & store in a cool, dry place in something like a paper or hessian sack. (That's a precis!).
Did it really tell you to do THAT on the packet?

You don't have to dig them up all in one go newby, just dig and eat as many as you need each time. The ones you leave in the ground they will keep growing. If you've got too many, do as DD says.

i have most of my potatos growing in tyres so i can harvest 1 plant at a time

You can store potatoes in a clamp along with other root veg though I am realy not sure about new potatoes.
