What have you been feeding them? Nitrogen will promote leafy growth at the expense of the beets while phosphorus is needed to promote root growth. So they need a low nitrogen and high phosphorus fertilizer. I sprinkle bonemeal along rows when I plant the seeds and if I get round to feeding them again use a low nitrogen feed which I also use for my potatoes.
