Courgette and goat's cheese thingamy

Serves 4 ... or 2 if you're starving!

1 medium onion, finely chopped
2 medium/large courgettes, sliced
6 eggs - beaten
150g goats cheese - sliced or cubed
chives

Fry the onion in a heavy bottomed frying pan until translucent, add the courgettes until slightly coloured.  Chop the chives finely and add the beaten eggs, season well.

Pour the egg mixture onto the veg, pop the cheese on the top.  Cook until the egg starts to set and finish under a hot grill to set the top and brown the cheese.

Eat hot or cold, lovely with homemade chilli jam and a green salad.

Darn, that sounds good Wellies - might need to try that out.  I corrected a wee typo; you had "Chop the chips finely"  :)

... clearly wishful thinking on my part, as I haven't had chips for ages!!

There's some cold in da fridge so pop round anytime ...  :D   Actually there's some cold in my lunchbag with salad for luncheon today too.

funny I have just seen this but I made something very similar last night but also put in small par boiled broc spears with the 'gettes.. it is delicious.
