I have some left over mixed summer fruits in the freezer that I would like to turn into something before I get this years pickings.

I'm not really in the mood for summer pudding today so thought I could make a coulis for use at a later date.

My question is, can I make the coulis and freeze it again (since the fruit has already been frozen once)?

Yes Yummy.  You are going to raise the temperature enough to kill bacteria by cooking the fruit.  Just cool as rapidly as possible and re-freeze.
Cheese makes everything better.
