i m about to pickle my beetroot but not sure how much and what type of vinegar to use, (balsamic/pickling) and do you add sugar? The jars are about jam jar size. Cheers.

from what i remember when my mum pickled beetroot you don't add sugar but I cant remember what vinegar you use
by the time i am old and grey i might be 100% organic

All I do, 'cause I'm lazy, is once beetroot has cooled down after cooking, I either slice them or leave baby ones whole and put them in ordinary malt vinegar.

Can't be that bad, as OH still has nearly 2 jars to finish eating from last August, and I'm cooking this year's beetroot for him now too!!!!

Thanks for your help, i ll do a different thing with each jar see whats best.
