I think I will need some inspiration. Cause I have several courgette plants, and really (apparently!!) two is probably enough for a family.  (I have about 8 plants  :shock: )  And already... one has almost become a small marrow..

What I normally do with courgettes, is fry them in olive oil with garlic and then add a tin of toms, reduce it, add loads of black pepper and serve.  And sometimes,,, I save some for lunch and have it on toast with a little bit of grated cheese.

So... what do you do with your courgettes???

i like them roasted in the oven with carrots and frylight, i also made a courgette cake last year sounds gross but was really nice, not sure where the recipe is but i got it off the net so just search google. it has a lime frosting but it was nicer without the frosting.

if you let the grow and become marrows - you then have the option of stuffing them.  then the list is endless - cous cous, rice with any number of flavours and other things added.

even the courgettes could be halved and stuffed as starters or light lunches.

Slice em into chunks have in any meat or veg stew.

Chop em into bits and boil in a minimum of water and a tiny drop of olive oil. Add onions that have been dehydrated with salt (after rinsing off). Add lemon juice and ground black pepper. Is this a chutney, I dunno, I don't add sugar, seems a lot of chutneys have sugar... this i can have hot or cold, usually accompanying mackerel stuffed with chili and ginger

I eat the young ones raw with dips.

I also will add them to stirfries, stews and even omelettes. If you're into juicing.....courgette, carrots, apple and some orange juice with a piece of ginger is FAB.

OH will only eat them if they are added to a curry or risotto, so made a chicken risotto tonight and used the biggest tennis ball courgette in that, but the dog likes them raw as I do, so we share them as I'm walking around the garden!!!!  But the round ones are not as easy to break in half as the long ones!

The courgette chutney recipe in the recipe section was very nice, although mine came out a little bit runny, and OH didn't like it, so I've got loads left.

PICKLED COURGETTES (should get rid of a few!!)

PS I've got lots more recipies if you want more!!

3_ cups white vinegar
1 cup sugar (_ may be more to your taste)
4 teaspoons salt
1 teaspoon dill seed
1 teaspoon mustard seed
1 teaspoon turmeric
3 whole cloves
1 kilo courgettes
6 small onions
2 peppers (1 red 1 green looks nice)

Put vinegar, sugar, salt, dill, mustard seeds, turmeric and cloves in a deep saucepan. Bring to the boil. Cool.

Wash courgettes and cut into slices about _ cm thick (if large deseed and cut the rings into 4). Slice the onions and separate into rings. Deseed and slice the peppers.

Place the vegetables in a non-metallic bowl and pour the cooled vinegar over. Stand for 1 hour. Turn into a saucepan and bring to the boil. Boil for 3 minutes.

Pack into clean, hot jars and add the liquid to within 1 cm of the top. Cover with non-metallic lids.

Makes 5 x 1lb (350 ml) jars.

Ready to use in 2 weeks.

Courgette quiche
about 2-3 courgettes- grated
1 cup plain flour
1/2 cup oil
grated cheese (to taste)
4 eggs
salt and pepper


Mix all together, quite a sloppy mixture, put into a greased flan dish and bake 180 deg until firm.

Lovely hot or cold
Pamela (in Spain) with no oven so can´t cook this :(

Courgette quiche is good in this weather,use small ones sliced thinly and you wont need to precook.

Also a reciepe we tried last night which we had with Hoisin Pork.

Coconut-baked courgettes

3tbsp groundnut oil
1 onion
4 garlic cloves 1/2 tspchilli powder
1 tsp coriander
6-8 tsp dessicated coconut(unsweetened)
1 tbsp tom. puree
1 1/2 lb courgettes thinly sliced
freshly chopped parsly to garnish


Pre heat oven to 180C/350F/gas mark 4

Heat oil in wok and cook onions 2-3 mins until softened.Add garlic,chilli and coriander and stir fry for 2 mins.
Pour 300ml waterand bring to boil.
Add coconut  and simmer for 3-4mins.Most of the water will evaporate at this stage.Spoon 4 tbsp of the spice and coconut mixture into a bowl and reserve.
Stir courgettes into remaining mixture and coat well.Spoon cougettes into a greased  dish ,sprinkle over reservedspice/coconut mix.Bake,uncovered in oven for15-20 mins.

slice them length ways
mix an egg with a bit of flour to make a sticky batter a bit of salt n pepper or if you want curry powder.
dip the strips in the batter and fry the little beggers till there golden brown.
and stick em in your favourite dip quite nice  :wink:

freeze em .........wash trim ends . cut to 1/2 inch slices blanch a minute fast chill pack in container leave 1/2 inch headspace . fry frozen in butter

Grate roughly equal amounts of courgette and carrot. Season. Make dressing - I did one with rice wine vinegar, olive oil and fresh mint. Mix it all together. Yum.

Cut into chunky chip shape and size.  Finely grind salt, pepper and mixed herbs into some plain flour.  Drag the chips through the flour, dip into a bowl of milk, drag through the flour again and deep fry until golden brown. Remember not to overfill the pan, wok or fryer or you will get soggy, oil-soaked chips.
