Hi
I am waiting for the pumpkins to ripen i would like to make some soup from them,i have never tried this soup is it worth me trying it?,also anyone have a good recipe any ideas would be great.Lillileaf

Squash (or pumpkin) Soup

A little oil
Pumpkin or squash peeled and cubed
Carrot or 2 cubed
Onion or 2 chopped fine
Potato or 2 cubed
clove of garlic sliced.
veg stock cube dissolved in water
Salt and pepper
Optional - Curry spices or curry powder (make it mild and sweet, or hot and spicey
If you have coconut milk, powder or tinned you can add some for a Thai curry style soup.)

Fry onions, carrots, potatoes and garlic, when soft add squash/pumpkin and fry for a few mins.
Add stock  and boil down until the veg are soft, add s&p and curry spices to taste.
Either mash / blend the soup 'til smooth.

Here's one I make regularly can use pumpkin or butternuts
Pumpkin soup:

Ingredients:
• 1 large onion,
• 1lb pumpkin,
• 1 table spoon Thai red curry paste,
• Tin coconut milk,
• 1 pint of stock,
• 1TBSP tomato purée,
• 1 garlic clove,
• Fresh coriander.

Method:
• Cook onion and garlic.
• add curry paste and purée.
• Add coconut and boil.
• Add stock and pumpkin.
• Simmer for 35 minutes.
• Blend.
• Top with coriander.
A woman's place is in her garden.
