As subject.  Should I cook first and freeze or freeze raw.  They are Bramleys.  I will only be making apple pie or crumble with them.

I either cook and freeze as puree, or blanch in boiling water then straight into cold with a squeeze of lemon, I don't bother to dry, although I think you are supposed to - I open freeze on baking trays covered in clingfilm, then freeze when hard

That's too much work for me. For many years I've simply peeled, cored and sliced the apples, stuffed them into freezer bags and straight into the freezer. No sugar, no fancy stuff. I've done this for years and the apples come out just as nice as the day they were peeled. Just don't peel and slice great quantities at a time, though. It's a family job here, one works the peeler, the next does coring and slicing and I stuff the bags and pop them into the freezer, several at a time to keep them fresh and not overload the freezer's cold capacity. We do anywhere up to 3 bushels over a few days.
