Hi All
Hope you are keeping safe
Many years ago I had a recipe for an eggless sponge cake ::) But in a mad clearout, seem to have lost/given away the recipe. Can anyone please help - preferably one without condensed  milk :) :)

My OH has just looked through his chef's compendium but can't find any recipe for what you want.
I work very hard so don't expect me to think as well.

Looking through my now dusty old books, have found a recipe in a copy of The Wartime Kitchen & Garden Book. Forgot where it was 'filed'
Anyway, here is the recipe if anyone would like to try it..........

8oz SR flour
2 level tspns baking powder
3 rounded tspns custard powder
pinch salt
3oz lard or margarine
2 rounded tblspns caster sugar
Milk to mix

Mix flour, baking powder, custard powder, salt together
Rub in fat & sugar and add enough milk to mix
Spread into two sandwich tins
Bake at 350F or gas 4 for 10-15 mins

Sounds easy enough even for me! :nowink:

I see you've found your recipe now, but I may as well post mine  :D

Greek (Eggless) vanilla sponge cake
Ingredients:
1½ cups Plain flour
1 cup Plain yogurt
3/4 cup sieved granulated sugar
1/2 teaspoon Bicarbonate of Soda
1 teaspoon Baking Powder
1/2 cup  sunflower oil
1 teaspoon Vanilla Extract/Essence                                 gas 5 cook 30mins appx

Grease and line an 8in cake tin.
Mix yogurt, sugar, B Powder and bicarb and leave until bubbles start to appear (about 2 or 3 minutes) then stir in oil and rest of ingredients.
Pour into the tin and bake.
Check cake with a skewer to see if done.

Top with berries and whipped cream

Made the one with yogurt, it's all gone.  First lot was with jam and cream.  Second lot with jam and custard.  Trousers getting tighter as we go.

I am going to have a go as well with that one.  I was going to serve it with fruit compote (plot fruit from the freezer), plus some ice-cream  :)

Cake novice here  :)  Is that a tin like a victoria sandwich one or one with deeper sides ?

Unless it's a very shallow sandwich tin you should be ok - be careful though some of my old sandwich tins are only 7ins though.
