How do I store my parsnips

I noticed that my parsnips were starting to grow so instructed my husband to pull the rest; there were loads of gorgeous giants! I have never had such a good crop so have never had to think about storing/preserving before. Any suggestions very welcome!

You could heel them in for a while or alternatively in the next month I start to get mine up & freeze them. The ‘tails’ get chopped up small for stews & soups & then I keep some fair sized chunks for roasting . I don’t Blanche them & they keep fine, oh I open freeze them before bagging in strong bags. oh I open freeze them before bagging in strong bags. Hope tha5 helps

I second this. Freeze them flat first as it stops them sticking together into one big clump.

You could also look at "sand clamps" if you have a cold garage. Some folks use large plastic drums with very dry sand and layer the root veg without any touching each other then put a lid on to keep the critters out.

I do pretty much what Snowy does with mine, although I do give them a quick two to three minutes' blanching. When they are cool I spread them out on trays and spray them with oil before open freezing. I then bag them up and they are all ready for roasting when needed.
