Given time and training you can grow an apple in the smallest of spaces. Have a look at apple tree forms on the web. Ballerina trees are a single stem and produce a few pounds of apples. Combined with rootstocks (http://www.orangepippin.com/resources/general/apple-rootstocks) you can pretty much have an apple tree any size you want.

If you're really keen, you can grow step-over espaliers that can line a sidewalk edge and are no taller than your knees.

The more dwarfing the rootstock the better the soil needs to be and the more weed free the ground needs to be. Permanent staking is also needed for the smaller and thus weaker stemmed trees.

Cordon or column trees are great. They grow to a max of 7' and a width of 2'. There are lots of varieties to choose from, pears grow well like this too. Just remember to stake well, dig in loads of organic matter and keep the bases weed/grass free for a good 4' radius at least. You could put permeable landscape fabric around the trees to make weeding easier.
