We do two things.  I poo pick the house every day and often pick up what is on the floor of the run and it goes into the compost pile in the garden (there are some shavings mixed in with this).  When I do a big clean then the shavings get burnt.  The shavings do take a very long time to compost down.  We are lucky and live in the countryside so can have a small bonfire without upsetting the neighbours. :)

Like carolbriar does when I pooh pick it goes in my compost bins, but when I do a major clean it goes into a long trench and this is left to rot down (luckily I have plenty of space to do this). I use hemcore which does rot down quicker than shavings.
Staffies are softer than you think.

It is and it's citronella scented so good for helping keep flies away. With horses it tells you to spray with water first but you just use it dry for chickens  :D
