I have a recipe for red currant shrub. It is an old fashioned drink and you can also use lemon or orange juice. It comes out like a liqueur for sipping. It is also very good for using in puds.
Cook fruit and strain as if for jelly. You need 300ml.
Mix with 600ml rum or brandy, grated zest from 1 orange and 1tsp grated nutmeg.
Seal in a jar for 7-10 days. Don’t worry if the juice and alcohol form a gel as this will get sorted later.
After steeping, heat very gently in a pan with 300g sugar. You just want to melt the sugar, not boil the alcohol off.
Bottle and mature for a few months.
