questions marrow chutney
« on: August 13, 2009, 09:55 »

hi there, I made some marrow chutney last night, followed the recipe but now not sure when we can eat it, we have tasted it and it's lovely although I did add some extra brown sugar, hubby kept coming out to the kitchen and commenting on the strong smell of vinegar  :D  i had a great time doing it and i'm so chuffed with myself, first time n all

do i need to keep it in the fridge (hope not!) was hoping to take along to a bbq on sat. night to show off haha

If its tastes nice now I would eat it.  You only have to leave chutney so the strong vinegar taste mellows, if you haven't got that go for it now.  We start on the chutney as soon as i start making it each year because we never have any left from the previous year.
Only trouble is, the sooner you start eating it the sooner its gone  Get going on another batch ::)

If you have it in sterilized jars that have sealed, dont keep it in the fridge, just out of strong light and cool.

oh, i didn't realise that

right, well i've got six jars made up, don't think they'll stay around for long, so the next lot i do i won't worry so much about the "vinegary" smell and taste - just leave them for a couple of months..........  thank you  :D
