Title: storing turnips and beetroot

please could you advise best way to store swedes and beetroot.  they are both about tennis ball size today.  when best time to store or can i leave them in ground for while?  apologies for being a bit ignorant but only in our first year of allotment owning.

Beetroot can be pickled or stored in damp sand in a box in the shed
I would have said the sweeds had a while to go before they were ready but it depends on the variety I supose

Apologies for ignorant question - have since read through website and found the answers I needed.  All very helpful.
