A couple of my first earlies are just barely breaking the soil surface - I can see green leaves at soil level. We're expecting a frost tonight, so I'm wondering if I need to do anything to protect them?

Also, when should I "earth up"? I didn't bother last time, and still had a nice crop.

I would suggest that this afternoon would have been a good time to earth them up whilst you could still see them!

Earthing up is a gradual process for me, I do it about 3 times during the season, doing it a few times helps keep the weeds in check - it also protects against frost when the plants are small enough to be covered.

It would have helped to have earthed them up before the frost

Have you got any fleece to throw over them? Poly sheet or bubblewrap - even newspaper if it's not expected to be windy
