I'd say you were too late and the horse is well up the road.  :)

Use them in a stir fry if thick enough or , as chives.

Latest time for Leeks is about July ish perhaps a bit later.
Top tip for camping....don't go.

Can't really see transplanted parsnips doing much at this time of year - they're not over keen on being moved, and their growth will be slowing dramatically anyway owing to shorter days and lower temperatures.

I'd just use them / freeze etc
I try to take one day at a time, but sometimes several days all attack me at once...

parsnips dont transplant very well any time of year shame about the leeks though dont like waste i would give them a go if you have a sheltered spot even if they grow to a size big enough for salad that would be fine.

I still have plenty of leeks that are going into their final positions this weekend; they were late sowings but will still be big enough in the spring for baby leeks; hmm braised baby leeks - yummy.

If I've got space, I'd never throw stuff out. Leeks are a winter crop anyway - so give them a go.

leeks will just be ready in spring early summer instead but thats no prob ,parsnips are a bit late to go in but try them they may come spring time also ,have they got 2 or the third leaf {which is different } on them as when i transplant parsnips i dont plant them with more than three leaves as the root is to advanced but make a hole with a dibber {like a leek} then put parsnip in {careful to put roots in neatly} then cover over until leaves just showing
