Blanching Celery

Hi

My celery is almost ready for harvesting, it tastes ok but is a bit tough...

How do i blanch it, or is it too late now? its almost 2 foot tall and looks about ready, can i wrap the stems below the leaves for a week to stop them being so chewy

It's actually a bit late to blanch (and tenderize) celery, but it wouldn't hurt to try. Some use burlap, others use heavy cardboard to wrap around the whole stalk area. I find this type of celery good for cooking sauces and such rather than eating...lots of flavour. Next year start wrapping stalks soon as they put on any height and keep adjusting as they grow.
