I keep mine in the fridge as they stay fresher for longer.

An egg will keep fresh for about 3 weeks if kept outside a fridge - longer in the winter, shorter in the summer.

If kept in an egg box they will keep longer.  If kept in the open they will keep less time.

If kept in an egg box in the fridge they will keep longer than kept in the fridge egg rack.

It's to do with evapouration of water from the egg.

The reason that eggs for sale are not refrigerated is that during transport they would be subjected to quick changes in temperature.  If they were kept refrigerated during transport then removed from their cold environment for display or to take home and kept at room temp. water from the air could condense on the egg shell and that moisture could start harmfull bacteria growing on it which could then infect people.

So the best thing to do is to buy your eggs as fresh as possible (unless you have hens).  Take them home and store them in egg boxes in the warmest part of the fridge (top shelf).

The will keep for ages and ages like that.

if your hens run with a cock their eggs should be kept in a fridge.
Staffies are softer than you think.

I too was very confused as to wether it was best to keep the eggs in or out of the fridge.
I read on the Defra website and the enviomental Health website that it is best to keep them in the fridge so that is what I now do

I've been keeping my eggs in the fridge, but they wont last long either way.
I was about to put some in this morning when I realised one was very very warm (only just laid).  I decided not to put it in until it is cold.
Am I right in assuming that this is the best thing to do? Dont want to cause food poisoning!

I keep mine in the fridge.

I leave freshly laid eggs out for the best part of a day and then put them in the fridge - like you, I didn't think it would be good to put a warm egg straight into a cold fridge.

you are not supposed to put anything warm into a fridge as it raises the fridge temperature allowing bacteria to grow  :(

Don't want them in the fridge, want them displayed so everyone can admire them! :D

Keep mine in a rack on the kitchen work top.  Never had any problems.

I keep my eggs on the side in the kitchen near the frying pan, makes sense to me.  They don't last long enough to worry about putting them in the fridge.  The fridge is much more useful for keeping beer cold.

I keep our eggs in a dish on the worktop.  Between us eating them (and I do a lot of baking - you can't beat fresh eggs for this!) and the rest going to friends and neighbours, they're never with us longer than two or three days!
