Title: Another mince pie question..
Post by: BumbleJo on November 26, 2018, 15:04
So I usually add some stuff to bog standard Robertson’s mincemeat, some chopped apple and a glug of Cointreau for instance, and was wondering if instead of dried cranberries I could add in some of the many red currants I have in the freezer.  What do you good bakers think? Add a bit of tang, or spoil the taste?

I wouldn't add both fresh apple, spirits and redcurrants, cos I'm thinking that might add too much moisture to the mix

Oh yes hadn’t thought of that.  But the principle of adding redcurrants to the mix instead of other stuff you think would be ok?

Go for it - I'd make a small trial batch - and then eat them all
