Beechgrove gardens grow 'Peregrine' in their greenhouse.

I think the rootstock for peaches is usually St Julian A

There is also a rootstock called Pixy, which would make a much more readily controlled tree in a polytunnel I think

There are a lot of varieties available these days, which are very reliable under cover (saved peach leaf curl issues) as long as they are hand pollinated.

Have a read around on line too, and see what appeals on the smaller rootstock

St Julien A can grow to around 5m so probably too big for most polytunnels

Pixy is the smallest you can get a Peach on I think. There are also semi dwarfing varieties available which might be an option depending on the dimensions of your tunnel

Interesting subject, I grow a grapevine in a cold glasshouse but the roots are outside of the glasshouse; so it might be that the roots are not as sensitive to temperature the same way that the leaves and fruit are. Could this also apply to other  fruiting plants? if so you could plant outside, train the plant into the polytunnel and leave the ground inside for other things.

Someone i know has peach trees in one of her tunnels. I believe the variety is Peregrine.
They are the most amazing juicy peaches i have ever tasted.
