Waltham Abbey Apple Cake

2 Apple cake recipes for Mr Lardman

Grease and base line an 8 or 9 inch round cake tin.

First make a crumble mix with
2oz plain flour
2oz butter
2oz sugar
1oz rolled oats
With warm hands squidge the crumble together to make small lumps of crumble the size of a pea.
Leave on one side

Cover 2oz if sultanas with boiling water and leave to plump up, then drain well.

Peel, core and finely slice 8oz of cooking apples and mix with the juice of half a lemon

Put the following dry ingredients in a bowl:
6oz SR flour
6oz caster sugar
1 teaspoon baking powder

Then mix in 4oz melted cooled butter and 2 eggs and 1 teaspoon vanilla extract.

Spread half the mixture on the base of the tin.
Top with the apples  and drained sultanas and then the remaining cake mix.

Finally top with the crumble mix  and bake at 180C or 160/170C fan for about 40 minutes. Depending on your oven it may need an extra 5-10 minutes.

Epping Apple cake is virtually the same except leave out the vanilla and replace with 1 tsp cinnamon.
Use 6oz apples and 2 oz blackberries.

Do not top with a crumble, instead top with 3oz of skinned roasted hazelnuts mixed with a tablespoon of Demerara sugar and a pinch of sea salt.

Eat lukewarm dusted with icing sugar and cream, custard or ice cream. :D

White or golden caster sugar in the cake itself Mrs Bee ?

Im giving the cinnamon a miss for a bit - everything is tasting a little samey at the moment.

Go for the Waltham Abbey Apple cake then me love.

Or you could replace the cinnamon with some ground star anise or use a little almond extract.

I use white caster sugar because I always have a catering size bag in the cupboard.

My pleasure Joyful.

I created the recipes to sell at those locations.

Well, Devon, Cornwall, Dorset, Somerset, Germany and America all have their own recipes for apple cake and I thought it would nice to have some in our neck of the woods.  :)

could I use some lumpy stewed apple in that to lighted the burden on my freezer . ;)

I don't see why not.

It might make the cakes wetter than using fresh Bramleys though.
