Title: Pickling onions

Hi all I have a huge amount of onion for storage I want to pickle all the small ones, can I pickle normal white and even red onion? Help appreciated as googling don't get me a direct answer

Yes you can. Cut the large ones into segments and treat as you would ordinary pickling onions.

If you look somewhere here you should be able to find Cheshire CHeese's recipe for pickled onions in balsamic vinegar.

They are gorgeous.

I leave it till Oct as they can go soft early. If spicing own vinegar then do that now so spices infuse in vinegar.

So I could store them till October then pickle them?
I leave it till Oct as they can go soft early. If spicing own vinegar then do that now so spices infuse in vinegar.

provided they have dried in the sun or in a shade, they should last in a light area. any which go soft/mouldy discard and they will go off if stored in the dark.
I pickled some in Oct and more in January.
I have also kept shallots from one season to plant the next, but would replace ever other year. Doing silverskin next year.

Mum, do you heat the vinegar ingredients in that recipe or not?
I had a recipe previously that pickled the onions in hot vinegar, which also sealed the jars. :unsure:

Out of all the onions I harvested I had quite a number that were quite small.  I just peeled, washed and put into a sterilised jar.  Heated up pickling vinegar, added a sahet of spices and a few chillies and boiled for a few min.  Let it cool and pour over the onions.  Seems to have worked ok.  I just have to wait 3 more weeks, but they look  good so far :)
