I have a few beetroots left in the ground.

Do I harvest them all now or will they stand?

Or do you think I Should have harvested them all by now?

I'm intending on using and eating the remainder of mine over the next couple of weeks, and don't intend to dig them up sooner than required.

The beetroot should be OK unless we get hard frost. If they have plenty of tops or weeds to shelter them they will OK, if not then draw a little soil over them or put on some mulch/straw/fleece/old bean stems etc.
