Parsnip soup too sweet
« on: November 30, 2011, 15:14 »
Hi everyone
I made a huge batch of parsnip soup this morning as had about 8 'snips to use up. I added 2 large leaks and 2 onions, usual mix of veg and chicken stock and herbs etc.

I blended it all down and added some milk to make it creamy but when I tasted it I was shocked at how sweet it was.
I have tried adding a bit more salt & pepper, even a touch of turmeric and some cayenne pepper (all in very small amounts) but it is still too sweet.

I know parsnips are naturally sweet but I've not had this problem before.
Any thoughts?
Is it too concentrated perhaps?
I hesitate to add more liquid in case it becomes flavourless but have no idea how to reduce the sweetness.
Would appreciate any advice.

Curry powder may help balance it out.  If you like it!

I tend to add a bit of chili.

Then again you could try adding in some mashed potato and more stock.  Will thicken and bland it down a bit.

unless you have a medical reason for not doing so..............just continue to add salt a little at a time, until you get it right.

Sometimes the same thing happens when I make passata, it is really surprising how much salt you need to balance the sweetness.

I don't think there's any harm in the extra salt, unless you really use a lot all the time!

Cumin is a good one to add, along with chilli - it's slightly sour.

Thanks guys, maybe will try the salt option because it is really thick already. I wonder if it might need a bit more liquid as well.

Thinning it down will help a little bit too, but use water not milk as otherwise you are adding another 'sweet' taste.

Hope you get it sorted to your liking  :)

My fave snip soup is parsnip n ginger. The ginger does help reduce the sweetness.

If you want to be cheffeeee, thin slice a leek, chuck in seasoned plain flour and fry till crispy and pop these on top of your soup, mmmmmmmm.
