I was given a large ripe pumpkin :ohmy: so thought I would try some of the recipes on the main recipes page.
Started by making the cream of pumpkin soup, 2 hours of sorting the pumpkin ready to do anything with it. ??? Got the soup made, worked out at about 3 pints of very nice soup. Even a few none pumpkin likers enjoyed it.
Looked at the pile of pumpkin left in the bowl, more than I used in the soup, and thought "hmmm, pumpkin pie sounds nice". So hour and a half later and I had two 8" round pies, v-nice :D
Still had a load of pumpkin left over. What next? Hmm pumpkin cheesecake. So a couple of hours later and I had a cheesecake chillin in the fridge. Quick try of it this morning and it is v-nice.
Still about 2.5lb of pumpkin left. Hour and a half later and two more pies, the first two went very quickly. And I have just over a pound of pumpkin frozen and waiting for other pies to be gone before using. :happy:
Can I just say thanks for the recipes and pumpkins are not just for cutting up at halloween.
