peeling fresh hard boiled eggs

I know that in order to peel hard boiled eggs from your own hens, the eggs need to be 2-3 weeks old & even then it can still be tricky to get the shell off.
But I've just learnt that  if you place your eggs in a steamer & steam for 20-22 mins, the shell are a doddle to remove! So I'm going to try this today & post my results (& pics if I can work it out)

I find if you peel them when they are cold (preferably fridge) after they have been boiled they are fine. I assume it is due to expansion and contraction  :unsure:. You still get the odd awkward one  :)

Try running under warm water while you peel, you need to break the membrane between the shell and the egg as this is what causes it to 'stick' :)

3 or 4 days maybe, not 2-3 weeks anyway.

That was the first thing we noticed, but I worked out if you keep the egg wet it is easier to peel. So when boiled I put the pan in the sink run cold water over the eggs and pan till cooled then peel under water, most times they come off clean :)

I wouldn't dream of waiting 3 weeks to eat our eggs, might as well go to Tesco ::)

On the odd occasion I have damaged a shell so boiled the egg that had just been laid.  8)  However, indigestion followed  :( so I give them a day or so before eating :D

Yes yes yes!!! It worked! All the years I had chickens before & it didn't matter what I did I could never get the shells off when hard boiled unless I left them ages.
So I steamed for 10 minutes, no need for running water & the shells came off perfectly.
As DH loves his pickled, I can now start straight away, with 7 eggs a day!
