Baking tip for gardeners.
« on: October 04, 2009, 13:04 »
Have started baking my own bread which is very exciting and so satisfying but as it is getting colder and everything takes longer to rise I thought I would share this tip I was given. If you put the yeast ferment and bread to rise in an electric propagator it will stay at a nice steady temp however cold your house is. I'm also giving it a go at getting a sourdough ready.

Don't know if everyone already knows stuff like this but I thought it was a good tip.
Be like a duck. Calm on the surface but always paddling like the dickens underneath.

Thats a great idea Kate, Im going to stock upon all the pans and tins and things that I need for breadmaking a la Val so I can start once I get my new shiny cooker in.  Ill add this to the list as the house is quite cold without the CH on

Something to do with the heated propagator till spring anyway (I did clean mine first!). Seems to be getting my sourdough culture going well. Now just got to discover if I like sourdough bread!

Sour dough is yummy and the crust is fantastic, my starter is now over a year old (never gave it a party ::)) it's like having an extra pet

Did wonder about that as I tended to it this morning as I fed the cat and the ducks and the tupperware pot bubbling in the propagator!

Thank God I have you guys. Saying that to other people might have seemed weird!

There are quite a few video versions on you tube that make it quite easy to do. If I can do the linky bit I'll try and find one for you.

My one involved water that raisins had soaked in rather than just water but I'm sure this will work too.

i noticed an old thread on here about brick built bread ovens did anyone ever build one? i am interested because im in the middle of building one, although the body of the oven is not actually brick. it is made from refractory concrete,i found the recipe for the concrete on the web.i would like to post a photo but dont know how to downsize it.
i dont suffer with insanity..........i enjoy every minute of it.

I usually put my dough on top of the PC monitor to rise, works a treat and usually doubles in size in about 30 minutes without being too airy.

How do I make sourdough starter please?

I followed this method and it has worked well:

Day 1  -  25g of dark rye flour and 50ml of warm water. Mix and leave at 27-30C (in the propagator ;) :D)

Day 2  -  Mix 25g rye flour with 50ml of warm water and then add to the previous days mix.

Day 3 and 4  -  Repeat Day 2.

By day 5 ready to use.

Well have just made my first yummy loaf of sourdough bread (the first was a bit of a brick) so I'm very proud of my new pet. It is now waiting the next time it is needed. Maybe it should have a name. :D

How about Homer?

He always says D'oh in a sour way  ;)
I try to take one day at a time, but sometimes several days all attack me at once...
