It depends what you are looking to grow really. One problem with grow bags is that they will dry out quite quickly, so thirsty crops will need regular watering which could be a problem if you are away from home for a period. When you say your garden is either hard standing or dwarfed by conifers I take it the places where you could put the growbags get a reasonable amount of light?

Anything deep rooted won't grow too well in grow bags so root crops are out, but there are plenty of other stuff like salads and spring onions that you can grow, as well as the more obvious things like tomatoes.

If you get a large pot or small raised bed you could also give courgettes a go but they will need to be watered if they are kept in a small volume of soil/compost.

raised beds can be placed on concrete but would need to be deep (perhaps two or three stacked on top of each other)
Staffies are softer than you think.

You could try growing in containers too. I have loads of pots with lettuces and a deep trough with sweet corn and some large pots with tomatoes, beans and peppers in them. Also trying some cucumbers in one of the pots.
