Hi, I have lots of spinach still growing at my allotment and was looking for something to do with it other than steam it.

Any ideas?

I am quite a basic cook to be honest, so the easier the better!  I was thinking about making some soup perhaps using Jamie Oliver's basic recipe (yes, I'm new to all this!) of carrots, garlic, stock, celery and onion then adding spinach.  Anything else?

Mix it with some ricotta, nutmeg parmesan, sauteed onions and seasoning.  Buy or make some pancakes and use the spinach to stuff them  Bake in the oven with some tomato sauce and if you can be bothered, some bechamel.  Sprinkle with cheese if you feel like it.
Cheese makes everything better.

Creamed spinach  :D

What about gobi aloo saag.  I add spinach to pakora (a handful) and it's fine to add to a curry, I add cubed spud or squash as well to eke it out a bit

I think the soup is lovely.  If you pick the leaves small you can use them in a salad. Chickens love spinach too  :D

Throw some of the tender baby leaves into a salad bowl, add your favourite veg like olives or whatever and some balsamic dressing. Doesn't get any simpler.
