oohhhh toffee mouthwatering - but can't touch it as have temporary crown in with strict instructions not to eat anything that needs much chewing - suppose i cold make some and lick it :D :D

Am I doing something wrong, because when I've tried the Hokey Pokey recipe it tastes mainly of the bi-carbonate and goes soggy within a day?

I did use a level teaspoon measure and you do have to whisk it in pronto and pour straight away. I wouldn't know whether it goes soggy after a day ::) but as soon as it's cold braek it up and put it in airtight container, the soggy bits would still be fab tipped over vanilla icecream :D

Hokey Pokey does absorb moisture from the air over a day or two and go a bit soft.. mine doesn't usually last that long TBH  ;)

I tried a double sized batch yesterday and it didn't work as well, it kind of caved in but there was enough left to tell you it lasted overnight in an airtight container and is still tooth shatteringly crunchy today :lol:

The airtight toffee is still ok 7 days later so I'm making some and putting it in jam jars in my Christmas hampers.

When ordering my Christmas hamper baskets (see hamper thread for details!) I couldn't resist some little organza bags, oh they are lovely!  The idea is that I put some homemade sweets in them and add them to my hampers.  I am thinking peppermint creams as they are so easy, but any other suggestions?  They need to be something that won't stick to the bags really.

I just searched using google!  This was my favourite:

just because it talked about dipping in chocolate!  I have a vague memory of making these as a child and loving them so that is what got me started on the idea!  Well, that and the fact that they are so easy to make!

I seem to remember from somewhere that you can add whisky to cinder toffee - sadly don't have any to try at the mo - I've had mixed results with cinder toffee, but as others have said even if it goes a bit funny the flavour is great, also nice bunged in apple crumble and apple cake to make a toffee apple crumble -ooohh now I'm hungry!

pepper mint creams are real easy to do and dont cost a lot to make i also half dipped them in dark chocolate , nice

all i did with my peppermint creams was add pepper mint essence to my left over royal icing and some more icing sugar to make it stiff enough to roll out and then use a cutter , leave them to dry out then dip in melted chocolate .
they worked out well .
