I did courgette Blue cheese soup yesters with 900g of overblown ones. Lush it is too  :tongue2: :tongue2:
 The HFW courgette polpettes are way nice. 

Next up courgette muffins, made with yeller uns  :D

Courgettes can be sliced into noodles with a julienne peeler . Then just saut and serve as you would spaghetti or Asian noodles. This is ideal for getting the children to eat more vegetables.

Use a Julienne cutter, or a spiralizer if you have one to prepare the courgettes.  In a plastic bag, or other container put plain flour, salt, black pepper and a good shake of garlic powder.  Toss courgette strings in this and then fry quickly in very hot oil.
I use these to serve with loads of different stuff, and they are very tasty.

Tonight I sliced & fried in olive oil & knob of butter tiny courgettes( thats my sneaky plan to not having a glut of them!😂), then when browned & about cooked & seasoned with salt & pepper & stirred through some dried breadcrumbs & Parmesan. Very nice they were too. If Id have had more time I might have mixed the crumbs & cheese & sprinkled over the courgettes in an oven proof dish & then baked them or even stirred some cream cheese through the courgettes before baking with the breadcrumbs & cheese on top. A bit of garlic would have been nice too
