From seedling to seed

I have raised mixed spicy salad leaves as plug plants but the moment I planted them out they went straight to seed  :(

Is that just because of the weather or is it too late in the season? I was hoping to create a succession of cut and come again salad leaves for the summer.

It's mainly the weather, but some of the spicy mixes of leaves are better sown towards the end of summer, for autumn eating.

My follow on row of spinach went to seed almost as soon as it had germinated.  The tiny, one inch plants looked quite peculiar topped with a flowering shoot.
