Yesterday I cleared my fig tree of unripe figs & there’s quite a haul, anybody have any ideas of what I can make with them. I googled & there’s an unripe fig ‘jam’ that looks ok, but before I invest any time into them anybody else do anything that’s worth trying please?

Thank you I’ve aken a look, interesting Mum about the bee stings, must take 1 out with me just in case.

If you have any left still you can try green figs in rose syrup. Whatever you do, make sure you soak them in two changes of cold water and then boil them to remove all that white latex before beginning to turn them into something luscious

I’ve decided to go with this recipe for fig jam, it says about the boiling x 2 & squeezing to get rid of’bad Taste’ . After a couple of days of them sitting in a bowl on the side a few have gorn orf so I’m left with 740g. I’ve washed & snipped the stalks off as they had stopped dripping the sap. They’re boiling for the first time now.

I’m struggling to squeeze out ge ‘bad taste’ without splitting the figs, do you think I’m doing something wrong?

Well I’ve finally completed the ‘fig jam’ . It didn’t take very long in all but it was spread over a few days.
Day 1, I boiled the figs & left to cool
Day 2, squeezed the ‘bad taste’ out & recoiled in more cold water.
Day 3 squeezed again & put 8n the fridge as I was going out.
Then I wasn’t well 2 days
So final day ,today I’ve boiled up in the sugar & water & bottled them which in all took about 45 minutes with washing & sterilising the jars.

Ive not opened a jar yet but I did taste a little that fell apart & it tasted fine,certainly not unpleasant but a bit lacking, I reduced the 4 cloves to 3 as I only ended up with 740g of figs & reduced the water & sugar by 1/4 too.

Perhaps they will be richer in flavour for keeping a while?

Yes that’s what I’m hoping, I ended up with 6 jars, they don’t look the lovely green they did in the photos in the link ☹️

If they are not very tasty, maybe you couid tip out one jarful and add some rosewater to the syrup before serving them with icecream?
