As the flowers fall off I am breaking the bit that will go in to a seed pod off is this the right thing to do, and after they have finished flowering do I cut the whole stem down or leave it as is

Leave it all alone & with a bit of luck you might see some little bulbils forming i the leaf joints when they are bigger & the stem is all dry you can plant the bulbils & in 4/6 years you'll have lots of new plants for free. I've got about 24 on the go from 2 years ago.Only 4 years til they flower,mind you the lily beetles have found them now.

Unless you plan to raise the seeds, pull off the seeding pod and this will return strength to the main bulb so future flowers are large and strong. When the whole stem finishes flowering, just leave it.

I did take the seed pods off after they all finish flowering, the reason I ask is there like 4 foot high and in pots, and what with the wind and all they keep falling over, thats why I ask if I can cut them down after, so I will leave as is then

No, don't cut the stalks off because like other plants, the lily is feeding itself now. Do add some time release fertilizer if you have it, or a bit of rose food to the pot. You'll need to tie the tall stalks to something stable like an downspout or table so it doesn't fall and break off in windy weather until fall comes and the stem dies back on its own.
